Chocolate Lava Cake 熔岩巧克力蛋糕

A cake that’s flourless! Yes, we are not smoking anyone here. Our chocolate lava cake recipe is a flourless recipe, with key ingredients being chocolate, butter, sugar and egg. This sinful indulgence is a popular dessert and was first seen in New York City back in 1987.

Ingredients 食材

  • 226g unsalted butter (226g无盐奶油)
  • 2 cups of bittersweet chocolate chips (2杯苦甜巧克力片)
  • 4 eggs (4个鸡蛋)
  • 4 egg yolks (4个蛋黄)
  • 6 tbsp of granulated sugar (6汤匙砂糖)
  • ½ tsp salt (½ 茶匙盐)
  • 4 tsp cocoa powder (4茶匙可可粉)
  • 8 tbsp Nutella (8汤匙Nutella)
  • 8 strawberries, sliced (8草莓,切片)
  • Icing sugar,点缀 (糖粉)

Baking Directions 烹煮过程 

Step 1: Prepare the Chocolate(准备巧克力)

Fill ½ of the saucepan with water, heat it up with medium fire. In a mixing bowl, pour in chocolate chips and butter. Place mixing bowl on saucepan and allow chocolate and butter to melt. Whisk in cocoa powder, mix well. (在一个锅里,煮热半锅的水。把巧克力和奶油倒入铁腕里,放在热锅上。 当让巧克力和奶油融化后,倒入可可粉,搅拌拌匀。)

Step 2: Prepare the Egg Mixture 准备蛋糊)

In a mixer, beat eggs, egg yolks, sugar and salt on high speed for about 3 – 4 mins till the mixture thickens and colour become pale. (用高速混合鸡蛋,蛋黄,糖和盐约3-4分钟,直到蛋糊变稠并且颜色变浅。)

Step 3: Prepare the Cake Mixture 准备蛋糕

Pour chocolate into the egg mixture, gently fold in. Do not over mix it.  (把巧克力倒入蛋糊,轻轻地折叠。不要过度混合。)

Step 4: Prepare the Ramekins (准备蛋糕模)

Grease ramekin with butter and sugar. Set aside. This will allow the cake to slide out from the ramekin easily. (在蛋糕模里刷上一尘奶油和糖。备用。这可以防止蛋糕烤好后粘在蛋糕模里。您能够轻松的把蛋糕倒在盘上。)

Step 5: Prepare to bake (准备烘烤)

Pre-heat the oven a 232oC. Using a spoon, fill the ramekin with 2/3 of Cake Mixture. Scope 1 tbsp of Nutella and drop it in the centre of ramekin. Fill in more Cake Mixture. Put 1 Ramekin into the oven and bake it for 9 mins. Remove from oven and try the cake. If the consistency is what you like, proceed to bake the rest of the cake at 9 mins. If not, adjust the baking duration accordingly. (预热烤箱232 摄氏度。把蛋糕糊倒入蛋糕模里直到2/3 满。把1汤匙的Nutella倒入蛋糕糊的中央。然后再用蛋糕糊盖上。 把一个蛋糕放入烤箱里。9分钟后取出,试吃。如果您满意蛋糕的成果, 您可以把其他的蛋糕放入烤箱里烤9分钟。 您可以以自己喜欢的口感调整烘烤的时间。)

Step 6: Ready to serve (点缀)

On a plate, over-turn the lava cake from the ramekin. Sprinkle icing sugar and serve with sliced strawberry. (把蛋糕倒转在盘上。 撒上糖粉,与草莓一起享用。)
