Happy Valentine’s Day!
Looking for a present for your significant other? Why not try making your own Non baked Berries Jelly Cheesecake! It’s really simple to make and if you start right now, you’ll probably still make it for your dinner date! This week’s recipe is shared by the lovely Cecilia Koh who has never failed to share some of her most delicious home bakes.

No. of servings: 1 Whole Cake
- 1 box of strawberries, halved (1盒草莓，切半)
- 1 box of blue berries (1盒蓝莓）
- 200g digestive biscuits，14 pcs (200克消化饼干,14片)
- 100g unsalted butter, melted over fire（100克无盐奶油，融化）
- 500g Cream cheese (500克奶油乳酪)
- 100g Sugar (100克糖)
- 1 tsp Vanilla essence （1茶匙香草精华）
- 18g Gelatine powder （18克明胶粉）
- 1 cup hot water （1杯热水）
- 90g Strawberry Jelly Crystals （90g草莓果冻粉）
- 150ml boiling hot water （150ml热水）
- 150ml cold water （150ml冷水）
Step 1: Prepare the biscuit base & set it in the container （准备饼干层）
Place the biscuits a Ziploc bag, use a rolling pin/wine glass to crumble them. Pour it into a mixing bowl.
Melt the butter over small flame. Pour it into the mixing bowl and mix it thoroughly with the biscuits crumbs. It should look like wet sand. Pour it into a cake mould, compress with a spatula. Set aside.
Step 2: Prepare cream cheese, decorate and chill （准备奶油乳酪，装饰和冷却）
Mix cream cheese, sugar and vanilla essence together until it becomes a smooth texture.
In a separate bowl, sprinkle the gelatine powder over the hot water and mix well. Pour it into the cream cheese mixture, mix well.
Pour the mixture into the cake mould with biscuit base. Let it set in the chiller for 30 mins. Take it out and decorate with strawberry and blue berries. Let it set for another 3 hrs.
Step 3: Prepare the Jelly, pour over the cheese cake and ready to serve （准备果冻，倒在奶酪蛋糕上。隔天享用！）
3 hours later, prepare the jelly. In a bowl with 150ml water, pour in Jelly powder. Once it has dissolved, add in cold water. Use a large spoon and gently pour over the cheese layer and set it in the fridge overnight. Release from the mould and ready to serve.
