How to make delicious homemade Wanton Noodles

Wrap it good because Lona Low’s bringing to the table her delicious homemade Wanton Noodles recipe! Everything’s made from scratch in this recipe so you’ve got to be a tad bit of a daredevil to try this one out. Though we must admit that it was a piece of cake once we got into the hang of things – and the satisfaction and gratification of feasting into your very own handmade noodles definitely earns its way into an achievement “unlock” moment!

Make no mistake that Lona Low has perfected this recipe making its way as one of her best (almost secret) recipes to date. She has planned and executed it to near perfection. Dollop a generous spoonful of wanton fillings for that extra crunch and juicy treat in every bite.

Ingredients 食材

Egg noodle (鸡蛋面)

  • 500g All-Purpose Flour, plus extra for rolling & dusting (500克面粉)
  • ½ tsp sea salt (½茶匙海盐)
  • 2 eggs (2个鸡蛋)
  • 125ml to 150 ml Water (125毫升 – 150毫升水)

Wanton ingredients (云吞

  • 250g pork collar, rinsed (250克五花肉)
  • 60g prawns, deshelled and deveined (60g大虾,去壳和去腸)
  • 1 tsp sugar (1茶匙糖)
  • 1 tbsp chinese cooking wine (1汤匙绍兴酒)
  • 1 tbsp light soy sauce (1汤匙酱青)
  • 1 tsp sesame oil (1茶匙麻油)
  • 2 tbsp spring onions, finely chopped (2汤匙青葱,切碎)
  • 2 tbsp black fungus, soaked and finely sliced (2汤匙黑木耳,浸泡切成细片)
  • 1 tsp ginger, grated (1茶匙姜,磨碎)
  • 24 wonton wrappers (24云吞皮)

Pre-prepared ingredients (预备)

  • 500g Char Siew, sliced (500克叉烧,切片)
  • 2 heads mustard green (2头菜心)
  • 4 cups chicken brooth (4杯鸡汤)

Condiments for noodle per serving (一碗面的调味料)

  • 1 tablespoon of fried shallot oil (1汤匙葱油)
  • 1 teaspoon of light soy sauce (1茶匙酱青)
  • 1 teaspoon of oyster sauce (1茶匙蚝油)
  • 1/2 teaspoon of dark soy sauce (1/2茶匙酱油)
  • 1/2 teaspoon of sambal chili paste (半茶匙三巴辣椒酱)
  • Pickled green chilli, as desired (青辣椒)
  • Spring Onion, for garnishing (青葱)


Step 1: Prepare the noodle (准备面条)

  • Add all ingredients into the mixing bowl, attached the bread hook and let it knead till the dough forms. (将所有材料倒入碗中。用面包钩将材料混合成面团形。)
  • Attached the pasta maker, let the dough through the pasta maker to flatten it, fold it into half, let it through the pasta maker again. Repeat the steps until the dough becomes smooth. (把面团压平器装上,撒上一点面粉。然后,放入面团。当面团出来时,将它折叠成半,再次放入压平器里。每过三次,调转旋钮从大数到小数,重复步骤直到面团变得滑顺。)
  • Change to metal pasta cutter attachment, cut the noodle into thin strips. Dust with flour. Set aside and let it dry. (将压平器换成切面器,将面团切成细条。在面条上撒上面粉,放入碗里,用湿布盖上,备用。)

Step 2: Prepare Wanton准备云吞)

  • Using the meat grinder attachment, minced the meat using the plate with the smallest hole. Change to the plate with biggest hole, grind prawn. (把绞肉器装上,用最小孔的板绞碎肉。切换到最大孔的板,绞碎虾。)
  • Add in all the wanton ingredients, except for the skin, mix well. (添加所有材料,除了云吞皮,混合好。)
  • On a piece wanton skin, scoop about a tsp of filling and place in the centre of the wrapper. Wet the sides of the wanton skin, fold and gather the sides. Finish by pressing hard on the gathering point to seal. Continue with the rest of the filling. (在一片云吞皮上,舀起一茶匙馅,放在皮的中心。沾湿皮的两侧,折叠并聚集侧面,密封完成。重复步骤,直到馅料包完。)

Step 3: Prepare the noodle seasoning(准备调味料)

  • In a serving bowl, pour in fried shallot oil, light soy sauce, oyster sauce, dark soy sauce and sambal chilli paste. Mix well and set aside. (在一个碗里,倒入葱油,酱青,蚝油,酱油和三巴辣椒酱。混合好,放在一边。)

Step 4:  Cook the noodle, mustard green and wanton. Assemble to serve!  (煮面条,菜心和云吞。混合,即可享用!)

  • In the heated pot with chicken broth, add in 5 wantons one by one. Cook until it floats up.  (在热鸡汤里,慢慢的放入5个云吞,煮到它浮起来。)
  • Bring a pot of 2l water to a boil. Blanch mustard for about 25 to 30 seconds. Drain and set aside. (将一锅2升水煮沸。 把菜心放入水里煮25至30秒钟。捞起,备用。)
  • Add a portion of egg noodles. Cook the noodles for about 40 to 50 seconds. Remove the noodles with a wire strainer, and plunge it into a bowl of cold water for a few seconds. Shake off any excess water, and return the noodles into the boiling water. Cook the noodles for another 20sec. Remove the noodles and shake off any excess water. Add into the serving bowl and toss with the sauces.(将一分的鸡蛋面放入热水里。煮约40至50秒。将面条捞起,放入一碗冷水中。当面冷却后,再次放入热水里煮20秒。沥干水分,放入碗里与调味料一起捞。)
  • Assemble with mustard green, wanton and char siew, and serve with pickled green chilli and chicken broth soup! (放上菜心,云吞,叉烧,与青辣椒和鸡汤一起享用!)
