An egg mayo sandwich is one of the most classic breakfast foods we all love. You can get it at the nearest bakery on the way to work or easily whip some up for a quick snack. It is creamy, filling, and an egg-citing breakfast to start our engines (I.E. stomachs) for the day!
Today, we will be introducing you to a special ingredient that you can add to the beloved sandwich that can help you power up your mornings- BRAND’S® Essence of Chicken!

We at Share Food want to power up our mornings too! And what better way is there to start with a delicious and invigorating breakfast? That is why we created our Egg Mayo Sandwich with BRAND’S® Essence of Chicken recipe!
Our recipe is simple and quick to prepare so it is perfect for those on the go! The Instagram worthy sandwich is also reminiscent of the pretty Japanese egg mayo sandwiches which will be a bright start to your day.
Also, with the power up benefits of BRAND’S® Essence of Chicken, this is a breakfast you will need right before that all-important meeting or big work presentation!
Here are the ingredients that you will need: BRAND’S® Essence of Chicken, eggs, bread slices, Dijon mustard, mayonnaise, sugar, salt, pepper, and spring onions.
Let’s get started with the first step!
Step 1- Boil the eggs
Our egg mayo sandwich has a twist to the traditional egg mayo sandwich where we will be placing an Onsen egg in the middle of the egg mayo. Hence, during this step, do take note that you will be preparing one Onsen egg and two hard-boiled eggs.
Fill a pot with two litres of water and place three eggs in it. Cover with the lid and bring the water to a boil.
Set a timer for seven and ten minutes. Remove one egg from the pot at seven minutes and place it in a bowl of cool water. Remove the other two eggs and place them in a bowl of cool water after ten minutes.
Tip- placing your eggs in cool water after boiling them stops them from cooking further and the temperature shock makes them easier to peel!
Step 2- Deshell the egg and prepare the egg mayo filling
Now that the eggs are cooked, we shall prepare the egg mayo and our special ingredient- Onsen egg soaked with BRAND’S® Essence of Chicken.
Peel and deshell the egg that has been boiled for seven minutes and place it in a clean bowl. Pour a bottle of BRAND’S® Essence of Chicken over it and set it aside, letting it soak for 10 minutes to infuse its flavours.

So, while all that goodness is soaking into our Onsen egg, let’s prepare the egg mayo.
Peel and deshell the remaining eggs and place them in a clean bowl. Using a fork or a potato masher if you have one, mash the eggs until fine.
Then, add the mayonnaise, sugar, salt, white pepper, and chopped spring onions into the bowl and give them a good mix until fully incorporated and creamy.
Step 3- Assemble the sandwich
Now, it is time for the fun part, putting the sandwich together!
First, stack two pieces of bread together and trim away the crusts with a knife. You can omit this step if you prefer your sandwich with the crusts on.
Then, spread a layer of mayonnaise on one slice of bread and a layer of Dijon mustard on the other.
Remove the Onsen egg from its BRAND’S® Essence of Chicken soak and cut it into half lengthwise. Do not throw away the remaining Essence of Chicken as you can pair it with the sandwich later!
Place both halves of the Onsen egg onto a slice of bread and cover them generously with the egg mayo.
Lastly, place the second slice of bread on top and cut the sandwich in half.
And your Egg Mayo Sandwich with BRAND’S® Essence of Chicken is done!
We particularly love how there are so many textures in our version of the classic egg mayo sandwich. There is the softness of the bread, creaminess of the egg mayo, and bite of the Onsen egg!

- 3 large eggs 1 for Onsen egg, 2 for hardboiled eggs
- 2 slices thick white bread remove crust, if desired
- 1 bottle Brand's® Essence of Chicken
- 2 hardboiled eggs
- 1.5 tbsp Japanese mayonnaise
- 1/8 tsp salt add more, if desired
- 1/8 tsp sugar add more, if desired
- 1/8 tsp white pepper powder add more, if desired
- 1/2 sprig spring onion, green part chopped finely
- Boil 2L of water in a saucepan.
- Submerge 3 eggs into the water. Remove 1 egg at 7 mins, transfer into a bowl of room temperature water.
- Remove the remaining eggs at 11 mins, transfer into a bowl of room temperature water.
- Deshell the 1 egg which came out of the pot first. Place it in a clean bowl and pour BRAND’S® Essence of Chicken over it. Soak for 10 mins till the preparation for the egg mayo filling is done.
- Deshell the remaining eggs and place them in another bowl. Use a fork and mince the eggs finely. Add in the mayonnaise, sugar, salt, white pepper, and spring onion, and give it a good mix.
- Spread a layer of mayonnaise on 1 slice of the bread and Dijon mustard on another.
- Cut the egg that was soaked with BRAND’S® Essence of Chicken into halves.
- Place the egg with yolk side down in the middle of the bread. Spread the egg mayonnaise, and cover it with another bread.
