Fancy a simple yet delicious meal in a bowl? Be sure to give this Japanese Yakitori Don recipe a try!

Instead of the usual way of grilling the chicken skewers, we have reduce the cooking time by half using this preparation and cooking method. The chicken is pre-marinated with the Yakitori sauce, allowing the chicken meat to absorb the flavor of the seasoning. After which, the meat and sauce is cook in a frying pan and that goes without saying that the Japanese Yakitori Don is ready to serve!

Feel free to replace chicken with other meat that you prefer or even add in blanch vegetables such as broccoli to make it a balanced meal! Try this Japanese Yakitori Don as you crave for it! Enjoy!

Ingredients
  • 2 chicken thigh meat (2个鸡腿肉)
  • 3 tablespoons olive oil (3汤匙橄榄油)
  • spring onion chopped into small pieces for garnish (葱,切碎)
  • seaweed strips for garnish (纸菜条)
Yakitori Sauce (烤鸡的调味料)
  • 5 Tablespoons soy sauce (5汤匙酱青)
  • 4 Tablespoons mirin (4汤匙味醂)
  • 4 Tablespoons sake (4汤匙日本米酒)
  • 1 Tablespoon brown sugar (1汤匙红糖)
  • ½ teaspoon ground black pepper (½半茶匙黑胡椒)
  • 1 medium garlic clove peeled and sliced (1个中蒜瓣,去皮切片)
  • 1 slice ginger approx. 2cm, cut into large strips (1片姜,约 2 公分,切成条状)
Sushi Rice (寿司饭)
  • 2 cups sushi rice (2杯珍珠米)
  • 2½ cups water (2 ½ 杯水)
  • ½ cup rice vinegar (半杯日本米醋)
  • 1 Tablespoon white sugar (1汤匙白糖)
  • 1 teaspoon fine salt (1茶匙细盐)
Onsen Tamago - Soft boiled Egg (温泉蛋)
  • 1 litre water (1000毫升水)
  • 200 ml water room temperature (200毫升水)
  • 2 large eggs refrigerated (2个大鸡蛋,冷藏)
Instructions
  1. Step 1 – Marinate the Chicken: Cut chicken into small cubes and place them in a mixing bowl, pour in the ingredients for the yakitori sauce, mix well. Set aside to marinate for 30 mins. (把鸡切成小方块。 在一个碗里, 把酱倒入鸡块里,搅拌均匀。腌30 分钟。)
  2. Step 2 – 40 mins before serving, cook the rice: Pour 2 cups of rice into the rice cooker pot, rinse with water at least 3 times. Fill the pot with 2.5 cups of water or the measurement mark and indicated for 2 cups of rice. Place the pot in the rice cooker and steam it. (把2杯米倒入锅里,用水冲洗至少3次。倒入2 ½ 杯的水或跟着锅里测量标记。放入电饭锅里蒸。)
  3. Step 3 – Prepare the Sushi vinegar: (Method 1) In a microwaveable bowl, mix rice vinegar, sugar and salt together. Microwave for 3 mins till the sugar fully dissolve. (Method 2) Pour the mixture into a saucepan, melt the sugar over low fire. Set side. (方法1)把米醋,糖和盐混合在一起,放入微波炉煮3分钟,直到糖融化。 (方法2)将以上调味料倒入平底锅,用微火煮化糖。
  4. Step 4 – Cook the Yakitori chicken: Heat up a frying pan, add in olive oil and marinated chicken meat. Once the chicken is cooked, pour in the remaining Yakitori sauce. Cover up the dish, allow the sauce to simmer and reduce to a thick sauce. In an interval of 2 mins, open up the lid and stir-fry the chicken. This will prevent one side of the chicken getting burnt. Once the sauce is fully reduced, off the fire and cover with the lid to keep the meat warm for serving. (在热平底锅里,加入橄榄油和鸡肉。一旦鸡肉煮熟后,倒入腌酱, 盖上锅盖,让酱汁煨减到浓酱。)
  5. Step 5 – Cook the egg: While the chicken is cooking, boil 1l of water in a saucepan. Once the water starts to boil, off the fire, add in 200ml tap water and gently submerge the cold eggs in the hot water for 6 mins. Cover the lid. (在锅里烧开1000毫升的水。一旦水开始沸腾,关火,加入200毫升水,轻轻地把蛋放入热水微煮12分钟。盖上锅盖。)
  6. Step 6 – Prepare the sushi rice: Remove the pot from the rice cooker, pour in seasoning and mix well, set aside in room temperature till the seasoning is fully absorbed by the rice. Place it next to a fan or window to expedite the absorption. (把调味料倒入饭里,拌匀。把饭放在桌上, 让米饭完全吸收调味料。放在风扇或窗口旁,以加快吸收速度。)
  7. Step 7 – Ready to serve: Place sushi rice, yakitori chicken and crack the soft boiled egg into a bowl. Serve with seaweed and spring onion. (将寿司饭,鸡肉和温泉蛋打入碗中和海藻,葱段一起吃。)

Timing is very crucial for cooking the soft-boiled egg. A saucepan that retains the heat well can cook the eggs in 6 mins. Do increase the cook time by a minute (1) as you increase the number of eggs and (2) if the saucepan does not retain heats well. (要煮好温泉蛋,时间是控制是非常重要的。耐热的平底锅可在6分钟煮好温泉蛋。请在以下的情况下增加一分钟(1)增加蛋的数量;(2)如果锅不耐热。
