This is a rather special recipe provided by one of our home cooks. Erinna took inspiration from Gordan Ramsay’s “Gordan’s Great Escape Southeast Asia” and created this Thai Red Curry with Duck and Lychee. With Singapore being a food haven, we have all sorts of curry over here. We love thai curry, but this is the first time we ever eaten a Thai curry with Duck meat, needless to say, we have never put fruits in our curry too. But we were amazed with how the lychee gives the whole dish a different taste altogether. The sweetness of the lychee brings a twist to the taste and is certainly a very unique way of distracting you from the spiciness of the red curry. For a healthier option, you can substitute coconut milk with either evaporated milk or yoghurt. A really tasty and spicy dish, I’m loving it!
