Ingredients
Noodle & Soup (面条和汤):
- 100 g dried flat rice noodle 100 克干平米粉
- 2 chicken thighs with bone (2个鸡腿,骨)
- 2 star anis (2个八角茴香)
- 2 teaspoons coriander seed (2茶匙芫荽子)
- 1 piece ginger approx. 5cm long (1片生姜,约5公分长)
- 1 shallot (1个小葱头)
- ¾ teaspoon salt (¾茶匙盐)
- 1 chicken stock cube (1个鸡精块)
- ½ teaspoon sugar (半茶匙糖)
- ½ onion cut into wedges (1/2个洋葱,切成2块)
- 2 spring onion white bulb (2个葱尾, 切除根部)
Vegetables as condiments, to be eaten raw (蔬菜调味品,生吃):
- ½ cup beansprouts (1/2 杯豆芽)
- ½ key lime cut into wedges (1/2 个柠檬, 切半)
- 4 chilli padi (4个指天椒)
- 6 sawtooth herb (6个Sawtooth Herb, 切半) / Replaceable with Coriander (可以用芫荽替换)
- 6 teaspoon rice paddy herb (6个Sawtooth Herb拔断,约4公分长) / Replaceable with 1of Cumin seeds (可以用1茶匙的小茴香替换)
- 20 thai basil leaves (20泰国罗勒叶)
Instructions
- Step 1 – In a pot, simmer in 2 big bowls of water, chicken thigh, star anis, coriander seed, ginger and shallot for 15mins. Add in, salt, chicken stock cube, sugar, onion and spring onion and allow it to simmer. (在一个锅里,煮2大碗水. 把鸡腿,八角茴香,芫荽子,姜和小葱头放入锅里煮15分钟。加入盐,鸡精块,糖,洋葱,葱尾,让它煨。)
- Step 2 – Remove the chicken thigh from the pot, remove the chicken meat from the bone, and slice the chicken meat into strips. Put the bones back into the pot and allow it to simmer for another 10 mins. (从锅中取出鸡腿,起肉, 然后把鸡肉切成条状。把骨头放回锅中,再让它煨另外10分钟。)
- Step 3 – In a pot, boil 2 big bowl of water. Place noodle into the boiling water and cook for 5 mins till it softens. Try to break 1 strand of noodle with a chopstick to check if it’s soft enough to be serve. (在一个锅里,烧开2大碗水。将米粉放入沸水中煮5分钟,直到它软化。)
- Step 4 – In a bowl, lay raw beansprouts, cooked noodle, chicken stripes, vegetables, lime and chilli padi. Then pour in the soup. Serve it with fish sauce on the side. (在一个碗里,把生豆芽,熟面条,鸡肉条,蔬菜,柠檬和指天椒。然后倒入汤。)
