As in Share Food tradition, we have a unique and delicious holiday recipe for you. It is chocolatey, chewy, and coconutty with no added sugar. Today, we are sharing Home Baker Stephanie Tan’s (Winter Sage) Chocolate Snowballs with Marshmallow Surprise recipe!

These snowballs are a chocolate and coconut dream, stuffed with Corniche Snow White Mega Marshmallow. These marshmallows are much larger than regular marshmallows in the market and fat-free!
Hence, Corniche marshmallows are a great versatile ingredient for marshmallow dessert recipes. When melted, the stickiness helps to bind ingredients together for bakes and they also make a lovely fluffy garnish.
For this Chocolate Snowball with Marshmallow Surprise recipe, we chose the mega marshmallows to get a sweet pillowy center in every bite. It also gives a nice chewy contrast to the crunch of the grated coconuts.

With Christmas coming up, your family and little ones will appreciate this dessert for its uniqueness and yumminess. The recipe is also simple enough that you can make it with them without making much kitchen mess.

Here are the ingredients that you will need: Corniche Mega Marshmallows, ground Ritz Crackers, grated unsweetened coconut, cocoa powder, condensed milk, melted butter, and vanilla essence.
Step 1 – Prepare the chocolate mixture
In a large bowl, mix the ground Ritz crackers, half (80g) of the grated coconut, and cocoa powder until well combined. To prepare the ground Ritz crackers, simply put the biscuits in a zip lock bag and hit them firmly with a rolling pin until they become fine crumbs.

Mix the dry ingredients
Add the condensed milk, melted butter, and vanilla essence to the bowl and fold them into the dry ingredients until well-mixed.
Let the mixture sit in the fridge for 20 minutes or so before forming the chocolate snowballs. #Tip: chilling sticky doughs or batters will make it easier to work with later, so do not skip this step no matter how tempted you are to get to the exciting part!

Step 2 – Shape and freeze the chocolate snowballs
Now, we are on to the fun part!
Using an ice cream scoop, place some of the chocolate mixture from the bowl on your hand. Roll it into a ball and then pat it into a flat circle on your palm. #Tip: place a bowl of water nearby to lightly moisten your hands each time before rolling as the mixture is very sticky.

Scoop some of the batter on to your hand
Place a Corniche Snow White Mega Marshmallow in the center of the circle and close the edges over the top of the marshmallow, pinching it together to seal. We love how the large size of the mega marshmallow fits perfectly with the ice cream scoop portion.

Cover the marshmallow with the chocolate mixture
Roll the ball until smooth and roll it in the remaining coconut to create a snowball-like effect. It does not have to be perfectly round.

Put the snowball on a baking tray lined with parchment paper and continue forming the balls until all the chocolate mixture is used up.
Let the chocolate snowballs freeze in the freezer for at least an hour so that they can settle into their shape.

Once the snowballs are ready, all that is left to do is arrange the snowballs on a plate and serve!

- 20 pcs Corniche Mega Marshmallows
- 125 g Ritz Crackers ground
- 160 g Unsweetened coconut grated
- 5 tbsp Cocoa powder
- 380 g sweetened condensed milk
- 76 g melted butter
- 1 tsp vanilla essence
- In a large bowl, mix the Ritz crackers, 80g of the coconut, and cocoa until well combined.
- Mix the condensed milk, butter and vanilla and stir into the dry mixture.
- Let the mixture sit in the fridge for 20 minutes or so before forming the cookies.
- Using an ice-cream scoop, scoop up some of the mixture from the bowl. Roll it into a ball with your hands and then pat it into a circle in your palm. #Tip: place a bowl of water nearby to lightly moisten your hands each time before rolling as the mixture is very sticky.
- Place a marshmallow in the centre of the circle and close the edges over the top of the marshmallow, pinching it together to seal. Roll the ball smooth and roll it in the remaining coconut.
- Place the snowball on a baking tray lined with parchment paper and continue forming the balls until all the chocolate mixture is used up.
- Place the tray into the freezer to freeze for an hour.
