This is an absolutely IG-worthy dessert! The warm golden-brown tart packed with oozing Ribena jam and crunchy crumbles is definitely a treat! You can serve it as it is or pair it with your favourite ice cream!

Enjoy baking and eating the crumbles with your family!
Here are the ingredients that you will need: Ready-made medium size savoury tart shell, mixed blueberries and raspberries, Ribena Cordial, white sugar, water, cornstarch, all-purpose flour, light brown sugar, salt, ground cinnamon, unsalted butter and mint leaves.
Let’s start with the first step.
Step 1: Prepare the Ribena berries filling
In a pan, add in the mixed berries, Ribena Cordial, and water.
Turn the heat up to high and let it cook for 3-5 minutes while stirring occasionally with a spatula. Cook until the berries burst and when the mixture has thickened slightly.
#Tip: If you do not have fresh berries on hand, frozen berries can work just fine too! You may also replace it with other types of berries too but remember to do a taste test. If it’s too sour, add in more sugar to balance it.

Cook the berries in until they burst and thicken
When the mixture is ready, add in the cornstarch and mix well with the spatula.
To check if the jam is thick enough, draw a line down in the centre of the pan with the spatula. If the jam has a gel-like consistency and does not immediately flow back to cover the pan, it is ready.
Remove it from the heat and set it aside to cool.

If you have any leftover Ribena jam, do not throw it away! You can pair it with bread, muffins, Swiss rolls, or even meatballs.
Step 2: Prepare the crumble
Preheat the oven at 180℃.
In a baking dish, combine the flour, sugar, salt, ground cinnamon, and cold butter that has been diced. Use your fingers to pinch the butter into the dry ingredients until you achieve a rough crumbly texture.
This will add an irresistible crunch to the Ribena Mini Berries Crumble!

Once the desired texture is achieved, set it in the oven to bake for 15 minutes or until light golden brown.
Let the crumbles cool down and use a spoon to break them into smaller crumbs.

Step 3: Assemble and bake
Continue to keep the oven preheated at 180℃ to bake the mini tarts after adding in the fillings.
This is the time to get your family or your little ones to come in to help. Place the ready-made tart shells on the lined baking tray and spoon in the Ribena jam to the brim of the tart. Sprinkle the crumble on the jam filling as desired.
#Tip: We recommend using savoury tart shells instead of sweet ones, as the mild saltiness adds an additional flavour profile to the tart! Otherwise, if you know of a great tart shell recipe, feel free to make your own tart shells from scratch!

Final round of baking!
Place the tray in the oven and let it bake for 3 minutes.
Once the tarts are lightly toasted, remove them from the oven and serve immediately.

- 8 savoury tart shells ready-made medium size
- mint leaves garnish
- 400 g mixed berries blueberry and raspberry
- 330 g ribena cordial
- 50 g white sugar
- 420 ml water
- 1 1/2 tsp cornstarch
- 1/2 cup all-purpose flour
- 3 tbsp sugar
- 2 tbsp light brown sugar
- 1/8 tsp salt
- 1 dash ground cinnamon
- 35 g cold unsalted butter diced
- In a pan, add the mixed berries, Ribena cordial, and water. Cook over medium heat for 3 – 5 mins until the mixture thickens.
- Add in cornstarch. Stir constantly to ensure that the mixture is well mixed. To check if it is ready, use a spatula and draw a line in the middle of the pan. It is ready when the jam becomes a gel-like consistency and the line on the pan stays visible for a few seconds.
- Switch off the flame. Set aside to let cool.
- Preheat the oven at 180oC.
- In a baking dish, add flour, sugar, salt, cinnamon, and butter. Pinch the butter and mix it with the dry ingredients using your fingertips until you achieve a rough sandy and crumbly texture.
- Transfer into the oven and bake for 15 mins.
- Remove from the oven and let it cool down.
- Use a spoon to break the crumbles into coarse grains.
- Preheat the oven at 180C, top heat.
- Place the tart shells on the baking tray.
- Add in Ribena berries jam to the brim and scatter the baked crumbles on top.
- Transfer to the oven and bake it for 3 mins. Remove and ready to serve.
