For the first meal of the day and the first destination, we are bringing you to Australia! Australia has some of the best shrimps in the world and a hearty shrimp sandwich is a popular go-to breakfast, especially during the summer.
So, to experience a taste of Australian cuisine right here in Singapore, we give you the Cajun Shrimp and Avocado Oat Sandwich!

Cajun Shrimp and Avocado Oat Sandwich
Here are the ingredients that you will need: Sunshine Australian Oat Soft Grain Wholemeal bread, shrimps, salt, Cajun powder, egg, ripe avocado, lettuce, and tomato.
Let’s get started with the first step.
Prepare and cook the prawns and egg
Prepare the shrimps by removing the shells and vein.
#Tip: Use a toothpick to help remove the vein of the shrimp without having to slit the shrimp.

In a bowl, add the shrimps, salt, and Cajun powder. Mix well to season the shrimp.

Warm up some olive oil in a frying pan on medium-low heat and add the shrimps.
Cook until the shrimps have turned red and are slightly curled before flipping them over. Cook for another 20 seconds then set aside on a plate.
#Tip: Overcooking the shrimp will turn the meat texture rubbery. Thus, cooking the shrimps on low heat and removing them from the pan before they are fully cooked through, is the best cooking method to achieve juicy and tender shrimp.

To cook the egg, we will be using the same frying pan to keep the cooking time short. But first, wipe it down with a kitchen towel so that the residue from the prawn will not stick on the egg.
Add in a little more oil and crack in the egg. Cook on low heat until the yolk is fully cooked through.
#Tip: A runny eggy yolk will cause a mess when you bit into the sandwich.

It is quick and easy, and by replacing lobster with snow crab, this recipe is more accessible to make it at home for those of us craving a taste of the USA!

Snow Crab Meat with Ultra Fine Crispy Bread
Here are the ingredients that you will need: Sunshine 100% Whole Grains Ultra Fine Wholemeal Bread, snow crab meat, unsalted butter, mayonnaise, chopped celery, spring onion, pepper, lemon juice, and some sides: chips, lemon wedge, and salad.
Let’s get started.
Prepare the snow crab filling
Heat up the butter in a frying pan on low heat.
Add in the snow crab and cook for 30 seconds on each side or until it is slightly browned.

Place the cooked snow crab meat into a mixing bowl and add the diced celery, mayonnaise, spring onion, and pepper.
Mix well, cover the bowl with a cling wrap and set it in the chiller for 30 minutes. This will allow the flavours to come together.

First, melt the butter in a pan on low heat and toast both slices of bread on both sides until brown and crispy.

In Singapore, we have a passion for Japanese food and culture. This is a fact backed up by the numerous Japanese restaurants and stalls all around the island! Although now travel and dining out restricts our food choices, we can still enjoy authentic Japanese cuisine at home!
Today, we will show you an exquisite Japanese sandwich recipe that suits a candlelight dinner - Beef Katsu Sandwich!

Beef Katsu Softmeal® Sandwich
Here are the ingredients that you will need: Sunshine Enriched Softmeal® Whole Grain bread, ribeye steak, sea salt, black pepper, all-purpose flour, egg, Japanese panko, tonkatsu sauce, peanut oil, and some sides: white cabbage, sesame mayonnaise, and French fries.
Let’s get started with the first step.
Prepare the beef
Season the ribeye steak with salt and pepper on both sides.
Let the steak sit in the chiller for 15 minutes to absorb the seasoning.
#Tip: For this recipe, we have chosen the ribeye cut. It is a good cut of meat that is both tender and easy to cook with no hard tendons in it. However, if you feel like splurging, feel free to get a good cut of Wagyu steak from your butcher!

Season the steak with salt and pepper
To give the steak a crispy coating, we will bread it.
Fill a plate with flour and coat the steak on both sides. Shake off the excess flour before coating the steak in beaten egg on all sides.
Quickly coat the steak generously with panko on both sides and place it back to the chiller again for another 30 mins. This will allow the panko to hold better on the meat and it will give you the perfect medium-rare.
Heat oil in a pot to 190℃ and deep fry the breaded steak for 45 seconds only. If you want to get a well-done steak, fry it for a total of 1 min 15 sec.
Remove the steak from the oil and let it rest on a plate for 5 minutes.
#Tip: When choosing the steak, go for a 1-inch thick slice. If your steak is smaller or bigger, you will need to adjust the timing of cooking accordingly.
Bring the oil temperature to 180℃, add the French fries and cook as instructed on the packaging.

Toast the bread, assemble, and serve
Toast the bread for extra crispiness and trim off the crust. Instead of disposing of the crust, put them to good use by making them into tasty croutons or even cinnamon breadstick.

- 2 slices Sunshine Australian Oat Soft Grain Bread
- 4 shrimps approximately 150g
- 1/4 tsp salt
- 1/2 tsp Cajun powder
- 1 egg
- 1/2 ripe avocado remove seed and sliced
- 2 lettuce leaves
- 2 slices tomato
- Deshell and devein the shrimps using a toothpick. #Toothpick method will make wrapping of the sandwich easier.
- Marinate the shrimps with salt and cajun powder. Mix evenly.
- Heat the pan on medium low heat, add in olive oil and shrimps. Once the shrimps have curled up slightly, flip it and cook another side for 20 sec. #Cooking the shrimps on low heat will prevent the shrimps from overcooking
- Set aside on a plate.
- Wipe the pan with a kitchen towel. Add in more olive oil, crack an egg into it. Cook till the egg yolk is fully cooked through. #A runny egg yolk will create a mess when it’s bitten into.
- Place a cling wrap on a chopping board.
- Place a slice of bread on the cling wrap, followed by 1 lettuce leaf, shrimps, egg, sliced avocado, tomato slices, 2nd lettuce leaf, and the last slice of bread.
- Wrap the sandwich tightly with cling wrap, slice it, and serve
- 2 slices Sunshine 100% Whole Grains Ultra Fine Wholemeal Bread
- 125 g snow crab meat thawed
- 1 tbsp unsalted butter
- 2 tbsp mayonnaise
- 3 tbsp chopped celery diced
- 2 tbsp spring onion chopped
- 1/4 tsp pepper
- 1/2 tbsp lemon juice
- Chips
- Salad
- 1 wedge lemon
- Heat up a frying pan on low heat, add in 1 tbsp butter.
- Add in the snow crab and spread it on the pan. Let it cook on 1 side for 30sec, then flip to the other side. The crab meat is ready when it is slightly brown on all sides.
- Transfer the crab meat into the mixing bowl and let it cool down completely.
- Add in celery, mayonnaise, spring onion and pepper. Give it a good mix, transfer to the chiller for 30 mins so that the flavours can come together.
- Heat up 1 tbsp of butter in a saucepan on low heat, spread it in the pan. Place the bread in, and toast on both sides till it turns brown and slightly crispy.
- Place the bread slices on a plate.
- Spread the snow crab filling on the top and fold each slice in half.
- Garnish the sandwich with more spring onion.
- Serve it with chips, lemon, and salad on the side.
- 2 slices Sunshine Enriched Softmeal Whole Grain bread
- 360 g Ribeye steak 1 inch thickness, room temp, cut into half
- 2 tsp sea salt
- 2 tsp black pepper
- 1 tbsp all-purpose flour sieved
- 1 egg beaten
- 20 g Japanese Panko
- 4 tbsp Tonkatsu sauce ready-made
- peanut oil for deep frying
- White cabbage shredded
- Sesame mayonnaise
- French fries
- Season the beef with salt and pepper on both sides. Let it sit for 15 mins.
- Coat the beef with a thin layer of flour on both sides. Pat off any extra flour.
- Coat it with egg.
- Coat it generously with panko.
- Pour oil into a pot and insert a thermometer. Once the oil has reached 180oC, place the beef into it and deep fry 45 sec. Remove the pot, and place it on a plate, let it rest for 5 mins.
- Heat up the oil and let it return to 180oC, deep fry the french fries as per the packaging.
- Toast the Sunshine Soft Meal® Whole Grain bread. Trim off the crust.
- Apply Tonkatsu sauce generously on both slices of bread.
- Place the fried beef steak on 1 of the bread slice, cover with the other bread slice.
- Slice the sandwich and serve with the sides.
