Cooking from home with a Kenwood Food Processor, not only saved Shirley’s time but also allowed her to add her own twists to make it a truly fresh and flavoursome dish. Compact and easy to use, it effortlessly blends the pumpkin and churn it into a healthy purée. Serve this dish in a claypot, to ensure it stays warm for long and leave you clamouring for more!
- 500 g pumpkin
- 1 can limpets shredded
- 100 g enoki mushroom root removed
- 5 medium prawns shelled and diced
- 2 shitake mushrooms sliced
- 800 g chicken broth
- 1/2 tsp salt
- pepper to taste
- vinegar to be served separately (optional)
- corn starch for thickening (optional)
- Remove Pumpkin skin and seeds. Rinse and cut into small pieces. Steam till slightly soft, then blend into a puree. *Add some broth for easy blending.
- Heat broth in clay pot and add Pumpkin Purée when it’s boiling. Mix well.
- Throw in Seafood, then Vegetables. Cover and simmer for about 7-8 mins. Add Salt, and Corn Starch to thicken if needed.
- Serve your delicious Claypot Golden Pumpkin Soup piping hot with vinegar.
