If any one of you are planning to save some money and bake your own cupcakes instead, we are venturing into a tasteful delight today – Yuzu Lemon Flaxseed Cupcakes!

What is Yuzu and how do you use it?
Yuzu have been all the hype these days.
For those of you who don’t already know, Yuzu is a Japanese citrus fruit that looks somewhat like a small grapefruit with uneven skin and can be either yellow or green depending its degree of ripeness.

What is Yuzu?

These days, yuzu is commonly used in cooking, generally as a souring agent via its juice and zest as opposed to being eaten on its own.
Its tart and fragrant flavour has made it popular. We have seen yuzu tea, yuzu vinaigrettes, yuzu in sauces; they have also been seen in snack flavours like chips and biscuits!

With the aforementioned benefits of the ingredients that we are using in this recipe, how can you not be excited to start baking these nutritious and tasty cupcakes?
Step 1- Prepare the flour mixture
Add the flour, salt and flaxseed powder in a mixing bowl and mix well.

Step 2- Prepare the Yuzu Lemon batter
This step is important for the flavour of these cupcakes.
Beat butter in a mixing bowl until soft and creamy. Add in sugar and zest and beat until light and fluffy. Gradually add in the egg yolks and beat till well-combined.

Add in the flour mixture and yuzu juices into the batter in three batches and beat till it is well-combined.

Pour 1/3 of the flour to the batter

Pour 1/3 of yuzu juice to batter then beat. Repeat 2 more time
Step 3 - Prepare the meringue and combine into the batter
We are doing a plain meringue so that our Yuzu Lemon Flaxseed Cupcakes will be nice and fluffy.
In a clean mixing bowl, whisk the egg whites till they turn frothy. Gradually add in sugar and beat till the peak stiffens.

Fold the meringue into the yuzu lemon batter in three batches using a spatula till it is well-combined.

Add 1/3 of meringue to cupcake batter and fold in. Repeat 2 more times.
Step 4- Bake the cupcakes
It’s now time to bake the cupcakes! Line the cupcake tin with cupcake liners and fill them till they are about ¾ filled up. A baking tip here is to use an ice cream scoop to fill up the cupcake liners.

An ice cream scoop ensures that all cupcakes are even!

Smooth down the batter with the back of a spoon.
Bake in pre-heated oven at 180°C for twenty to twenty-five minutes or until a skewer comes out clean when inserted into the cupcake.
Step 5- Prepare the yuzu lemon cream cheese frosting
What a cupcake without it’s frosting? We are making a yuzu lemon cream cheese frosting for our cupcake.
Beat the cream cheese and butter until it is smooth. Add the icing sugar and beat until the sugar dissolves and the mixture is light and creamy. Add the yuzu jam and whisk until light.

Beat until the frosting is light and creamy
Fill the frosting into a piping bag and pipe the frosting on the cupcakes.
A tip is to put a piping bag over a tall cup to help to hold it upright while filling the piping bag.

Fill a piping bag with frosting
Pipe the frosting onto the cupcakes in a circular motion, starting from the center.
Make sure that your cupcakes have completely cooled before frosting them or the frosting will run!

Frost the cooled cupcakes
Top off your cupcakes with some Yuzu bits and you are done!

- 180 g self-raising flour sifted
- 1/4 tsp salt
- 6 tbsp 100% Pure Golden Flaxseed Powder
- 200 g butter
- 80 g castor sugar
- 2 tbsp lemon zest
- 4 egg yolks
- 120 ml yuzu juice 3 tbsp yuzu jam and 90ml water
- 2 tbsp lemon juice
- 4 egg white
- 70 g castor sugar
- 250 g cream cheese room temperature
- 80 g unsalted butter room temperature
- 125 g icing sugar sifted
- 3 tbsp yuzu jam
- Add the flour, salt and flaxseed powder in a mixing bowl and mix well.
- Beat butter in a mixing bowl until soft and creamy.
- Add in sugar and zest and beat till light and fluffy.
- Gradually add in egg yolks and beat till well combined.
- Add in the flour mixture and juices into the batter in 3 batches and beat till well combined.
- In a clean mixing bowl, whisk egg white till frothy.
- Gradually add in sugar and beat till stiff peak.
- Fold the meringue into the yuzu lemon batter in 3 batches using a spatula till well combined.
- Line the cupcake tin with paper cupcake liners and fill each liner till 3/4 full. #Tip: Use an ice cream scoop to fill the cupcake liners.
- Bake in pre-heated oven at 180°C for 20-25 minutes or until a skewer comes out clean when inserted into the cupcake.
- Beat the cream cheese and butter until smooth.
- Add the icing sugar and beat until the sugar dissolves and the mixture is light and creamy.
- Add the yuzu jam and whisk until light.
- Fill the frosting into a piping bag and pipe the frosting on the cupcakes. #Tip: Put the piping bag over a tall cup to help hold it upright while filling the piping bag.
