Ingredients
  • 5inch wanton skinapproximately 30 pcs, 125mm x 125mm
  • 50strands chivesfor tying the knot
Filling
  • 350g chicken thighminced
  • 3pcs wood fungussoaked and cut into small cubes
  • 15 prawnsmedium-sized, de-vined and chopped coarsely
  • 7 water chestnutsremove skin and cut into small cubes
  • 2sprigs spring onionscut into small pcs
  • 1 egg
Meat Marinade
  • 1tsp salt
  • 2tsp sesame oil
  • 2tsp oil
  • 2tsp corn flour 
  • 2 1/2tsp light soy sauce
  • 1tsp white pepper
Dipping Sauce
  • ¼cup ribena blackcurrant cordial
  • ¼cup onionchopped
  • ½tsp cornflour
  • toasted sesame seedsGarnish
Instructions
Step 1: Prepare the meat stuffing
  1. Mix the minced chicken with the marinade. Set aside for 15 mins.
  2. Add the filling ingredients into the marinated meat and combine the ingredients. Cling wrap and place it in the chiller, allow it to marinate for 30 mins.
Step 2: Prepare the chives
  1. Boil a pot of water. Blanched the chives for a few seconds. Remove from water and plunge them into a bowl of room temperature water. Set aside.
Step 3: Wrap the money bag
  1. Remove the meat from the chiller.
  2. Place 1 tsp of meat mixture in the centre of the wonton skin. Gather the edges of the wonton skin together and pinch it with your fingers, squeeze gently to remove any trapped air bubbles.
  3. Use a chive to tie up the money bag. Tie a double knot to prevent the knot from releasing while frying.
Step 4: Deep fry the money bag
  1. Heat up the oil in a deep wok over medium-high heat.
  2. Once the oil is hot, add in 3 – 4 money bags at a time. Ensure that they are standing upright to cook the filled portion first.
  3. Once the wanton skin starts to brown, flip the top of the money bag downwards to fry the top.
  4. Once it is fried evenly, place the money bag on a plate lined with kitchen towel.
Step 5: Prepare the dipping sauce
  1. In a heated pan with 1 tsp oil, add in chopped onion. Stir fry till it’s slightly brown. Pour in Ribena cordial and corn flour, stir to combine until it thickens. Remove from flame and ready to serve.
