Ingredients
- 200 g prawns de-vined and de-shelled. Keep the tails. (200克虾,去壳和去静。虾尾保留。)
- 200 g fish fillet small-size(200g鱼肉)
- 1 whole cucumber cut into a small cylinder to form the eyes of the fish. (1个黄瓜,切成小圆筒作为鱼的眼睛。)
- 3 tbsp tobiko fish roe (3汤匙鱼蛋)
- 1/2 tbsp salt (1/2汤匙盐)
- ½ tbsp pepper (½汤匙辣椒粉)
- ½ tbsp cornflour (½汤匙蜀粉)
- ½ tsp ginger minced (½茶匙切碎的姜)
- 1 tbsp egg white (1汤匙蛋白)
- sesame oil for greasing(芝麻油)
Instructions
Step 1: Prepare the meat paste (准备肉酱)
- Mince the prawn and fish meat. Place the meat into a mixing bowl, add in Tobiki and season with salt, pepper, ginger and cornflour. Add in egg-white to bind the paste together. (剁碎大虾和鱼肉。将肉放入碗里,加入鱼蛋,盐,胡椒,姜和玉米粉。倒入蛋白以将肉酱粘合在一起。)
Step 2: Shape the fishes (捏成鱼的形状)
- Using a Chinese soup spoon, grease it with a layer of sesame oil. Grab a handful of meat paste and form the shape of the little fishes. Slide them onto the steaming plate gently. Stick the eye (cucumber) and tail (prawn tail) on. (在汤匙上,抹上层芝麻油。抓一把肉酱,放在汤匙上,形成小鱼的形状。轻轻地将它滑到蒸盘上。插上眼睛 “黄瓜” 和尾巴“虾尾”)。
Step 3: Steam and ready to serve (蒸熟和准备上菜!)
- Once the water boils in the steamer, place the fishes into the steamer. Steam it for 20 mins or until the paste is fully cooked. Ready to serve! (一旦蒸锅中的水煮沸,把小鱼放入锅里。蒸20分钟或直到小鱼完全煮熟。准备上菜!)
