Almond milk jelly layer
2cupswater
2tbspcondensed milk
6scoops100% Pure Almond Powder
1 3/4 tspagar agar powder
3tbspsugar
Mango jelly layer
2cupsmango juice
3tspagar agar powder
sugar to sweetenoptional
Instructions
Step 1: Make the first mixed fruit layer
In a small pot add cold water, lychee juice, agar agar powder and stir till there are no lumps.
Turn on heat and bring mixture to a boil while stirring constantly.
Let it boil for a minute till the agar agar powder is completely dissolved. #Tip: Check by dipping a spoon into the liquid to see if there’s any specks of agar agar stuck to the back of the spoon.
Add sugar and stir till dissolved then remove from heat.
Pour ¼ inch agar agar into mould and distribute the fruit pieces evenly over the agar agar.
Once all fruits are added, pour the rest of the liquid gently over them.
Let this layer chill in the fridge for 2 hours till it is firm enough to pour second layer.
Step 2: Make the second almond milk layer
Combine the almond milk ingredients and mix well.
In a small pot add the almond milk and agar agar powder and stir till there are no lumps.
Turn on heat and bring mixture to a boil while stirring constantly.
Let it boil for a minute till the agar agar powder is completely dissolved.
Add sugar and stir till dissolved then remove from heat.
Ensure first layer is set and score the surface with a fork. Gently pour the hot almond milk agar agar on top through a strainer.
Let this layer chill in the fridge for 2 hours till it is firm enough to pour third layer.
Step 3: Make the third mango layer
In a small pot, add the mango juice and agar agar powder and stir till there are no lumps.
Turn on low heat and stir till the agar agar powder is completely dissolved.
#Tip: Be careful not to overcook this fruit mixture as simmering agar agar in acidic liquid for a long time will break it down and the agar agar will not set.
Ensure second layer is set and gently pour the hot mango agar agar on top.
Let the agar agar cool down and refrigerate for a couple of hours.
Step 4: Serving
Slide a thin flat knife around the mould to separate the agar agar from the mould.
#Tip: Unmould only when about to serve as the agar agar will melt.
