Ingredients
- 1 barramundi / seabass
- 1 tsp salt
- 10 cloves garlic chopped
- 1 thumb ginger chopped
- 1 red chilli large-size, cut into small pieces
- 2 chilli padi cut into small pieces
- 300 g assam paste
- 3 tbsp sugar as desired
- 30 ml water room temperature, depending on thickness of the assam juice

Instructions
Step 1: Marinate the fish
- Spread a layer of salt on the fish. Set aside and allow it to marinate
Step 2: Prepare the assam juice
- In a bowl, mix assam paste and 500ml water evenly. Drain the impurities and set aside the assam juice.
Step 3: Cook the assam gravy
- In a wok with 2 tbsp of heated oil, add garlic, ginger, and chilli into the wok and fry till fragrant. Add in sugar, assam juice and water. Stir gently and let it boil. Add in more sugar, as desired. If the mixture is too thick, add in more water.
Step 4: Steam the fish and serve
- In a wok pour in water and place a steaming rack. Boil the water for 3 minutes.
- Pour the assam gravy over the fish, place it inside the wok and let it steam for 10 mins.
- Garnish with spring onions and it is ready to be served.
