Baby Back Pork Ribs with Roasted Vegetables
We cooked the baby back pork ribs in a truly Asia style of using common condiments such as curry powder, tapioca flour and oyster sauce and marinated the pork overnight so that the sauces can be encapsulated within the meat. Prepare your own salad or vegetable mix for a healthy meal of high protein and fibres.

  • 1kg pork rib(1公斤排骨)
  • 1 broccolicut into smaller pieces(1个中形西兰花,切成小块)
  • 6 white button mushroomshalved (6双孢菇,切半)
  • 1 red capsicumcut into cubes (1个灯笼椒,切丁)
  • 2 cornscut into 3 parts (2个玉蜀黍,切成3段)
  • 2tbsp olive oil(2汤匙橄榄油)
  • 4cloves garlicminced (4瓣大蒜,切碎)
  • tsp dried thyme(1 ½干百里香)
  • saltto taste (盐, 随意)
  • ground black pepperto taste (黑胡椒, 随意)
Marinade for Pork Ribs (排骨腌料)
  • tsp tapioca flour(4 ½ 茶匙木薯粉
  • 3tsp sugar(3茶匙糖)
  • 3tbsp oyster sauce(3汤匙蚝油)
  • tbsp soy sauce(1汤匙酱油)
  • 3tsp curry powder(3茶匙咖喱粉)
  • 3tbsp chinese rice wineShao Xing or Hua Tiao (3汤匙绍兴酒)
Step 1: Prepare the Pork Rib
  1. Wash and pat dry the ribs with kitchen towel. Pour all the seasonings into a bowl, mix well. Brush the marinade on the ribs. Transfer to a ziplock bag, marinate overnight in the refrigerator. 把排骨洗干净, 弄干。把所有腌料搅匀涂在排骨。放在袋子里, 放入冰箱腌隔夜。
Step 2: Bake the Rib
  1. Preheat oven at 220 Degrees Celsius. 在220摄氏度预热烤箱。
  2. Transfer the ribs to a deep baking dish, reserved sauce. Bake at the lowest rack for 20 mins. 将排骨放在烤盘,放在烘炉的下层,烤20分钟。酱汁留着备用。
  3. Baste with the reserved sauce. Flip over, bake another 10 minutes. 涂上酱汁,把排骨翻过来。烤10 分钟。
  4. Increase the oven temperature to 220'C, flip over the ribs, transfer to the top rack and grill for 5 minutes. 把排骨放在上层,用220 度烤 5 分钟。
Step 3: Prepare and roast the Vegetables
  1. Preheat oven at 220 Degrees Celsius, lay baking paper on baking sheet. 在220摄氏度预热烤箱。把烤纸放在烤盘上。
  2. Prepare 6 pcs of 20cm x 20cm aluminium foil, brush each foil with butter and sprinkle a pinch of salt. Wrap a corn with each foil. Lay it on the baking sheet. 准备6个20 x20厘米的铝箔,刷上奶油和撒上少许的盐,把玉蜀黍包起。然后,放在烤盘上。
  3. Place Broccoli, White Button Mushroom, Red Capsicum, onto the prepared baking sheet. Add olive oil, garlic, thyme and season with salt and pepper. Gently toss to combine. Place in oven and bake for 12-15 minutes, or until tender. 将西兰花,白蘑菇,灯笼椒, 放在烤盘上,撒上橄榄油,大蒜,百里香,盐和胡椒。轻轻拌合。放入烤箱烤12-15分钟,或直到熟透。
