Braised Chicken with Black Fungus

  • 2pieces large chicken drumstickscut into 10 – 12 pieces(2个大鸡腿,切成10-12块)
  • 35g black fungus(35克黑木耳)
  • 8pieces dried chillihalved and soak in water(8个辣椒干,切半,浸泡在水中)
  • 1tbsp garlicchopped (1汤匙切碎的大蒜)
  • 1tbsp oyster sauce(1汤匙耗油)
Chicken marinade (鸡的腌料):
  • 2tbsp dark soy sauce(2汤匙酱油)
  • ½tsp pepper(½茶匙胡椒粉)
  • ¼tsp salt(¼茶匙盐)
  • 2tsp sesame oil(2茶匙芝麻油)
  • 2tsp chinese cooking wine(2茶匙绍兴酒)
  • 1tbsp cornflour(1汤匙蜀粉)
Step 1: Prepare the black fungus (准备黑木耳)
  1. Soak the black fungus in room temperature water for 10 mins. Once it has softened, use scissors to remove the hard part of the fungus. Set aside. (将黑木耳浸泡在水中。10分钟后,用剪刀去除硬的部分。备用。)
Step 2: Marinate chicken for 20 mins (腌鸡腿20分钟)
  1. Marinate the chicken with all the seasonings, except cornflour. Seal the bowl with cling wrap, transfer it to the chiller. (除了蜀粉以外,将所有的调味料与鸡肉均匀混合。用保鲜膜将碗密封着,转移到冰箱。)
  2. 20 mins later, add in cornflour and mix evenly. Set aside. (20分钟后,倒入蜀粉,与腌好的鸡腿肉均匀混合。备用。)
Step 3: Start cooking & Ready to serve (开始烹煮,并准备上菜!)
  1. Heat up a pan with medium heat, add in 1 tbsp oil, chopped garlic and dry chilli, stir-fry till it’s aromatic. Add in chicken, cook till it’s ¾ done. Add in black fungus and 100ml water, cover the pan and let it braise for 10 mins. Once the chicken is cooked, add in oyster sauce, mix well. Season with more pepper, salt and dark soy sauce, if desire. Serve immediately with warm rice. (用中火加热锅,加入1汤匙油,切碎的大蒜和辣椒干,炒到材料释放芳香。加入鸡腿,煮到3/4熟。加入黑木耳和100毫升的水,把锅盖上,焖10分钟。一旦鸡肉煮熟,加入蚝油,拌匀。即可与米饭一起享用!)
