  • 2 chicken thighdiced
  • 1/2tsp salt
  • 1/2tsp pepper
  • 1/2can button mushroomsthick slices
  • 1/2 carrotcut into wedges
  • 1tsp gingerminced
  • 2cloves garlicminced
  • 2tbsp cooking oil
  • 2tbsp light soy sauce
  • 1tbsp dark soy sauce
  • 2tbsp hua diao chiew
  • 150ml water
Step 1- Marinate the chicken
  1. In a bowl, add the chicken thighs, salt, and pepper and mix well. Cover and let it marinate for 10minutes to an hour.
Step 2- Cook
  1. Heat the pan up and add in 2 tbsp of cooking oil. Add the chicken and let it cook until browned. (cooking tip: adding chicken first will release its flavour)
  2. Add the minced ginger and garlic to the chicken. Cook until fragrant.
  3. Add the mushrooms and carrots. Cook for a few minutes.
  4. Add shaoxing wine/ huadiao wine , light soy sauce, dark soy sauce, and water. Mix well and bring to a boil.
  5. Simmer for 15mins and serve.
