Ingredients
  • 500g pumpkin
  • 1can limpetsshredded
  • 100g enoki mushroomroot removed
  • 5 medium prawnsshelled and diced
  • 2 shitake mushroomssliced
  • 800g chicken broth
  • 1/2tsp salt
  • pepper to taste
  • vinegar to be served separately(optional)
  • corn starch for thickening(optional)
Instructions
Step 1: Prepare the Pumpkin
  1. Remove Pumpkin skin and seeds. Rinse and cut into small pieces. Steam till slightly soft, then blend into a puree. *Add some broth for easy blending.
Step 2: Cook the Pumpkin soup
  1. Heat broth in clay pot and add Pumpkin Purée when it’s boiling. Mix well.
  2. Throw in Seafood, then Vegetables. Cover and simmer for about 7-8 mins. Add Salt, and Corn Starch to thicken if needed.
Step 3: Serve immediately
