Buddha's Delight Vegetarian
Hearty and delicious! This comforting vegetarian dish is full of earthy flavours and has a satisfying texture to every bite. A recipe shared by home cook Jasmine Ong, Buddha's Delight (罗汉斋) is a popular vegetarian dish that is traditionally consumed by Buddhist monks. Now it's dish a common household dish and Buddhists have it on special occasions such as Vesak Day.

Ingredients
  • 400g chinese cabbagesliced to 5cm length
  • 1 carrotdeskinned and sliced
  • 1can mock abalone
  • 8cloves garlicminced
  • 8thin slices ginger
  • 100g spicy bean pastetau cheo
  • 2tbsp vegetarian oyster sauce
  • 2tbsp oil
  • 1tbsp sesame oil
  • 300ml water
  • 100g sweet beans
  • 30 dried lily bubs
  • 10 dried chinese shiitake mushrooms
  • 10pcs dried black fungus
  • 50g glass noodletang hoon
  • 100g beancurd stickssoak in a bowl of room temperature water till soften
Instructions
Step 1: Prepare the ingredients
  1. Sweet Beans: Rinse in water. Make a small slit on the top of the beans, pull out the hard-fibrous part as shown in the video.
  2. Lily bubs: Soak in a bowl of room temperature water for 30 mins till soften. Snip the ends and tie a knot.
  3. Chinese shiitake mushroom: Soak in a bowl of hot water for 30 mins till soften. Remove the stem using a pair of scissors as shown in the video.
  4. Black fungus: Soak in a bowl of hot water for 30 mins till it fluffs up. Remove the hard part of the fungus using a pair of scissors as shown in the video.
  5. Glass noodle: Soak in a bowl of room temperature water for 30 mins till it softens.
  6. Beancurd sticks: Soak in a bowl of room temperature water for 30 mins till it softens. Use a knife and cut into 5cm length portion.
Step 2: Cook dish and serve
  1. In a large frying pan with heated oil, stir-fry garlic and ginger till fragrant. Add in spicy bean paste and fry till fragrant.
  2. Add chinese cabbage and stir fry till soften.
  3. Add the remaining ingredients, except sweet pea. Mix evenly and simmer for 2 minutes. Add the sweet beans and continue to simmer for about another 2 mins till all the ingredients soften. Add more water if required.
  4. Lastly, add in glass noodles. Stir gently and let it simmer for 1 minute to absorb the gravy. Best served immediately.
