Ingredients
  • 2slices Sunshine Australian Oat Soft Grain Bread
  • 4 shrimpsapproximately 150g
  • 1/4tsp salt
  • 1/2tsp Cajun powder
  • 1 egg
  • 1/2 ripe avocadoremove seed and sliced
  • 2 lettuce leaves
  • 2slices tomato
Instructions
Step 1: Prepare and cook the shrimps and egg
  1. Deshell and devein the shrimps using a toothpick. #Toothpick method will make wrapping of the sandwich easier.
  2. Marinate the shrimps with salt and cajun powder. Mix evenly.
  3. Heat the pan on medium low heat, add in olive oil and shrimps. Once the shrimps have curled up slightly, flip it and cook another side for 20 sec. #Cooking the shrimps on low heat will prevent the shrimps from overcooking
  4. Set aside on a plate.
  5. Wipe the pan with a kitchen towel. Add in more olive oil, crack an egg into it. Cook till the egg yolk is fully cooked through. #A runny egg yolk will create a mess when it’s bitten into.
Step 2: Assemble the sandwich
  1. Place a cling wrap on a chopping board.
  2. Place a slice of bread on the cling wrap, followed by 1 lettuce leaf, shrimps, egg, sliced avocado, tomato slices, 2nd lettuce leaf, and the last slice of bread.
  3. Wrap the sandwich tightly with cling wrap, slice it, and serve
