Chicken & Prawn Burger Sliders

  • 12pieces 2.3” bunslice into half and toast it at 160 degree for 3 mins
a) Sambal Chicken Sliders
  • 500g chicken thighde-boned & de-skin
  • 2 red chillideseed. Cut into 1/3 each. Grill to caramelize it.
  • 120g cucumbershredded
  • 60g grated mozzarella cheese
  • sambal chilli saucepre-made
Chicken Marinate
  • Pinch of sea salt
  • ½tsp chilli powder
  • 3tbsp sambal chilli
b) Grilled Prawn slider
  • 6 prawnsLarge-size, weigh about 100g each
  • 8cloves garlicminced finely
  • 60g peashootssoak for 5 mins. Aside to let it dry out.
  • 60g grated mozzarella cheese
  • 30g mayonnaise
  • worcestershire sauceas desired
Egg Mayo
  • 4 hard boiled eggmashed with fork
  • 3tbsp mayonnaise
  • Pinch of saltas desired
  • Dash of black pepperas desired
Step 1 - Marinate Chicken Meat (Day before)
  1. Cut the chicken thigh into 40g – 55g portion. Slit the thick part of the meat to prevent uneven under-cooking.
  2. Marinate the chicken with salt, chilli powder and sambal chilli sauce. Mix evenly and allow it to marinate for at least 12 hrs in the chiller.
Step 2 - Prepare Egg Mayo
  1. In a saucepan, heat 1l water. Add in eggs and cooked it for 8 minutes.
  2. Drain the hot water and pour in tap water. The coolness from the water will remove the egg white from the shell which allows easy peeling.
  3. Mash the eggs, add in mayonnaise, salt and pepper. Mix well. Set aside in the chiller.
Step 3 – Prepare the prawn
  1. Trim off prawn feelers, torns and the front legs. De-shell the prawn body, leave the head (optional) attached to the body. Use a satay stick and poke through the prawn from tail inwards through the body and the head. Silt open the prawn body top, remove the black tract. Be gentle with the prawn head, make sure it doesn't drop off.
Step 4 – Cook the Prawn and Chicken
  1. Preheat the oven at 230 degree Celsius.
  2. On a grill pan, grease with olive oil and heat it up using medium heat. Add in prawns. Lightly brush entire prawn with butter, worcestershire sauce, add chopped garlic and squeeze mayonnaise on the silt.
  3. Grill 5 to 8 minutes. Once it’s almost cooked through, top with mozzarella cheese. Remove from heat once it’s cooked. Set aside.
  4. Clean the grill pan with a kitchen towel.
  5. Grease the pan with some olive oil. Add in the marinated chicken and grill for 4 minutes on each side. Turn off the heat, spread 1 tbsp of sambal chilli on each chicken steak.
  6. Top each steak with mozzarella cheese and transfer to the over to melt the cheese.
Step 5 – Assemble and stack the ingredients in the sequence
  1. Sambal Chicken slider: Bun base, Shredded cucumber (squeeze out as much juice as possible), Sambal Chicken with cheese, Char-grilled red chilli, Top bun
  2. Prawn slider: Bun base, Peashoots, Egg Mayo, Prawn, Top bun
