Fortune Poached Chicken With Abalone

  • 1 large chickenweigh about 2kg (1只大鸡约2公斤)
  • 1can abalone(1罐鲍鱼)
  • 1bunch kailan(1包芥蓝)
  • 1.5tbsp salt(1.5汤匙盐)
  • 1pieces large knob gingersliced into 4 or 5 (1块姜,切成4-5片)
  • 9cloves garliccrushed(9瓣大蒜,压碎)
  • 1/2tsp sugar(半茶匙糖)
  • 2tbsp oyster sauce(2汤匙豪酱)
  • 1tbsp MAGGI Concentrated Chicken Stock(1汤匙MAGGI鲜鸡汁)
  • 2tsp cornflourmixed with water (2茶匙玉米粉和水)
  • salt(盐)
  • sesame oil(麻油)
  • ice cubes(冰块)
  • pomegranate seedsFor Garnishing(点缀:石榴子)
Step 1: Prepare and Poach the Chicken (准备水煮鸡)
  1. Rub the whole chicken (inside and out) with 1 ½ tbsp of salt. (把1 ½ 汤匙的盐摸在整只鸡的内与外。)
  2. In a pot of boiling water, fully submerge the chicken. When the water starts to boil, add in ginger slices and garlic, and bring it to a boil again. Reduce the heat and allow the chicken to simmer for 20 mins without the lid. (在一锅沸水中,把鸡放入锅里。水煮沸后,加入姜片和大蒜。减低热量,让鸡焖煮20分钟,无需盖子。)
Step 2: Cool down the chicken (让鸡冷却)
  1. Turn off the heat and leave the chicken in the pot for 30 minutes covered with lid. After which, transfer the chicken into a big bowl and pour ice water over it. Let it stay in the ice bath for 20 minutes.(把火熄灭,盖上盖子,继续让鸡在锅里微焖。 30分钟后,将鸡放进一个大碗里,倒上冰水。让它在冰浴中浸泡20分钟。)
Step 3: Simmer the Abalone, Sauce and Blanch vegetables (炖鲍鱼罐,煮酱汁和菜)
  1. While you are cooking the chicken. Open the Abalone can and simmer in hot water for 30 to 45 minutes. (当鸡在锅里煮时,o打开鲍鱼罐,在热水中炖30〜45分钟。)
  2. In a Saucepan, bring 200ml water to a boil. Add in sugar, oyster sauce and MAGGI concentrated chicken stock. Mix well until the sugar dissolves. Slowly add in cornflour, premixed with water, to thicken the sauce. Set aside. (在平底锅里,煮沸200毫升水。加入糖,蚝油和MAGGI鲜鸡汁。混合,直到糖溶解。慢慢加入蜀粉水。当酱汁稠酱后,留在锅里,备用。)
  3. In a wok, bring 3l water to a boil. Add 1 tsp of salt, blanch the vegetables. Once cook, lay it on the serving plate. (在锅里,煮沸3升水。加入1茶匙盐,把芥蓝烫熟。然后,把它摆放在盘子里。)
Step 4: Add more flavour to the chicken and chop it up ( 提味和剁鸡)
  1. Drain the ice water, rub the sesame oil and salt all over the chicken gently. Chop the chicken. (把冰水倒掉,轻轻擦上芝麻油和盐。剁鸡。)
Step 5: Ready to serve (上菜咯!)
  1. Arrange the chopped chicken neatly on the bed of vegetables. Place the Abalone on the chicken and garnish with pomegranate. Serve immediately (把剁好的鸡整齐地摆放在芥蓝上。把鲍鱼放在鸡肉上,用石榴子做点缀。即可享用。)
