
We had this flavorful fried bee hoon at a zichar stall in Woodlands and decided to make our own rendition of Hakka Fried Bee Hoon. While we maintain the flavors by using the same key ingredients that includes the oh-so-good salted fish, silver fish, chicken and egg, the amount of oil is greatly reduced to make this dish less sinful.

Ingredients
- 100 g dried white vermicelli soaked in room temperature water until it soften.( 一百克干白粉丝,浸泡在室温水中,直到软化)
- 1/4 cabbage cut into strips (1/4白菜,切成条状)
- 2 tablespoon dried salted fish cut into small cubes(2汤匙咸鱼干,切成小方块
- 2 tablespoon dried silver fish rinse with water (2汤匙干银鱼,用清水冲洗干净)
- 5 cloves of garlic chopped (5瓣大蒜,切碎)
- 1 chicken stock cube (1个鸡精块)
- 1 cup water (1杯水)
- olive oil to cook (橄榄油,烹调)
- red chilli to garnish(红辣椒,配菜)
- spring onion to garnish (葱,配菜)
Seasoning for the eggs (2个鸡蛋的調味料):
- 2 eggs
- 1 teaspoon soya sauce (1茶匙酱油)
- 1 teaspoon of pepper (1茶匙胡椒粉)
Marinate for chicken thigh meat(鸡腿肉的調味料):
- 1 chicken thigh meat (1个鸡腿肉)
- 1 teaspoon sesame oil (1茶匙麻油)
- 2 teaspoons soya sauce 2茶匙酱油
- 1 teaspoon pepper (1茶匙胡椒粉)
Instructions
- Step 1: Pan fry the following items individually and set aside: Salted fish, Silver Fish, Eggs and chicken thigh meat. (将以下的食材分开煮熟,然后各自放在碗里:咸鱼,银鱼,蛋和鸡腿肉。)
- Step 2:In a wok, add in olive oil and fry chopped garlic. When the garlic turned slightly brown, add in chicken stock cube. Pour in cabbage and stir fry with ½ cup of water till it softens. Mix in white vermicelli and cooked it with another ½ cup of water. Stir fry for 5 mins and add in the cooked salted fish, Eggs, chicken thigh meat and silver fish.
