Hakka Yellow Rice Wine Chicken

Ingredients
  • 1 whole chicken
  • 2cups hakka rice wine
  • 2pieces gingerthumb size, shredded
  • 300ml chicken broth
  • 2tbsp oil
  • 2tsp pepper
  • 2tsp salt
  • 2tbsp soy sauce
  • 10 black fungussmall and soaked
  • spring onionsfor garnish
Instructions
Step 1: Marinate the chicken
  1. Season chicken with salt and pepper. Set aside.
Step 2: Cook dish and serve
  1. Place in oil and fry ginger till wrinkled.
  2. Next place chicken in and fry till oil starts to come out from meat.
  3. Pour in chicken rice wine, followed by chicken stock.
  4. Flavour with soy sauce and sugar, as desired.
  5. Optional: You can add black fungus.
  6. Simmer till chicken is cooked, garnish with coriander and it’s ready to be served.
