Ingredients
  • 10 large prawnswith shells
  • 3cups vegetable oil
  • 4cloves garlicpeeled, chopped
  • 2plants spring onionswashed, cut into thumb-lengths
Sauce
  • 2 1/2tbsp tomato ketchup
  • 1tsp pounded brown salted soya beansaka taucheo
  • 1tsp oyster sauce
  • 3tsp sugar
  • 1/2tsp salt
Instructions
  1. Wash prawns, trim heads.
  2. Heat oil in wok. Add prawns and deep-fry till shells turn red. Remove and drain.
  3. Pour out oil, leaving only about 2 tbsp in wok. Heat again and add chopped garlic.
  4. Stir-fry briefly and add sauce ingredients.
  5. When sauce thickens, add the prawns and stir well.
  6. Add spring onions and mix well. Turn off heat and dish out the prawns for serving.
