Healthy French Beans with Salted Egg Yolk
This dish is simple to prepare and it has been modified to make it a healthier dish - instead of frying the french bean, we blanched it with a little bit of salt and oil to enhance the taste and give it a little shine. Ingredients
  • 250g french beanwash and cut into 5cm (250克菜豆,洗净,被切成5cm)
  • 4 salted egg yolksteam and mashed (4个咸蛋黄,蒸,压碎成泥)
  • ½tablespoon oil(半汤匙油)
  • ½ teaspoon salt(半茶匙盐)
  • 25g butter (25公克牛油)
  • 2cloves garlicchopped (2个蒜瓣, 切碎)
  • 4 chilies padichopped (4条小辣椒, 切碎)
  • 1teaspoon sugar(1茶匙糖)
Instructions
  1. Step 1: Steam salted egg yolk for 7 mins. Remove and mashed. (蒸咸蛋黄。 7分钟后取出,压碎。)
  2. Step 2: In a pot of hot water, add in oil and salt. Blanch french beans for 3 mins. (在一锅热水,放入油,盐和四季豆。3分钟后取出。)
  3. Step 3: Heat a wok over medium heat, melt the butter. Add in garlic and chilies, stir fry till the fragrances of the spices releases. Mix in the mashed salted egg yolks and sugar.
