Ingredients
- 1 chicken weigh about 1.2 - 1.5kg
- 500 ml water
- 1 tbsp salt
- 1 tbsp soy sauce
- 1 tbsp white pepper
Herbs
- 24 g huai shan Radix Dioscoreae Oppositae (淮山)
- 18 g dang shen Codonopsis Pilosulae ( 党参)
- 16 g yu zhu Solomon's Seal Rhizome (玉竹)
- 22 g long yan gan Dried Longan (龙眼干)
- 10 g gou qi zi Wolfberries (枸杞子)
- 6 pcs hong zao Red Dates (红枣)
- 3 g chuan gong Szechwan Lovage Rhizome (川芎)
- 5 g tang gui Angelica Sinensis (当归)
- 15 g bei qi Astragalus Membranaceus (北芪)
Instructions
Step 1: Marinate the chicken
- Rub soy sauce, salt and pepper evenly on the surface of the chicken. Set aside.
Step 2: Steam the herbs
- Place the herbs and water in a heat-proof bowl. Steam for 5 minutes.
- Remove from wok and set aside to cool.
Step 3: Steam the chicken & serve
- Lay a layer of heavy-duty foil on the steam rack and a layer of baking paper over it.
- Place the chicken in the middle of the baking paper. Pour the herbs and water over it.
- Stuff half of the herbs into the chicken’s cavity. Seal the foil and steam the chicken for 2 hours.
- Once it is cooked through, unseal. Season the chicken essence with salt or soy sauce for taste. Serve immediately.
