Ingredients
Pork marinade
  • 500g bulan minced pork
  • 100g caster sugar
  • 20g Sichuan mala chilli powderadjust to taste
  • 40ml chinese cooking wine
  • 50ml light soy sauce
  • 1/2tbsp dark soya sauce
  • 1tbsp oyster sauce
  • 1/2tsp ground black pepper
Honey glaze
  • 2tbsp honey
  • 1tbsp water

  • 11x5cm diameter round cookie cutter
Instructions
Step 1: Prepare the meat and marinate
  1. Add all the pork marinade to a big bowl and mix evenly. Let it marinate for 30 mins.
Step 2: Bake the bak kwa
  1. Place a large piece of baking paper on a baking tray, and place half of the meat mixture onto the middle of it.
  2. Place another piece of baking paper on top of the mixture and roll it flat with a rolling pin. Remove the top parchment paper when it reaches the desired thickness.
  3. Bake in an oven, middle tray, at 150 degrees Celsius for 15 minutes.
Step 3: Cut and glaze the bak kwa
  1. Use a round cookie cutter to cut the baked meat. Remove the fringed meat.
  2. Apply the honey syrup generously over one side of the bak kwa.
  3. Bake the bak kwa in the oven, top tray, at 220⁰C for 3 - 5 minutes or until the bak kwa starts to brown a little on the edges of both sides.
