Ingredients

  • 1bottle Brand's® Essence of Chicken
  • 200ml chicken stock
  • 100ml water
  • 1 egg
  • 1bunch mee sua
  • 1stalk xiao bai chye
  • 1tsp fried onionas desired
Chicken Marinade
  • 100g boneless chicken thigh meatcut into short strips
  • 1/2tsp light soya sauce
  • 1/2tsp sesame oil
  • 1dash white pepper
  • 1/4tsp salt
  • 1/4tsp corn flour 
Instructions
Step 1: Marinate the chicken & prepare a hard boil egg
  1. Mix chicken thigh with all the seasoning. Give it a good mix and marinate for at least 30 mins.
  2. In a saucepan with boiling water, boil the egg for 8 mins. Once it is cooked, transfer to a bowl of room temperature water. Deshell and set aside.
Step 2: Cook the noodle
  1. In a saucepan, boil the chicken stock and water. Reduce heat to simmer.
  2. Add in mee sua. Cook for 30 sec or desired doneness and transfer into a serving bowl.
  3. Add in chicken slices and green vegetables. Once the soup starts to boil, off the heat and pour in a bottle of BRAND’S® Essence of Chicken.
Step 3: Assemble and serve immediately
  1. Place the vegetable and chicken meat on the mee sua.
  2. Pour the soup over.
  3. Place the hard boil egg and garnish with fried shallot.
