Pistachio Crunchy Cookies

  • 150g unsalted butter
  • 80g castor sugar
  • 1tsp coffee paste
  • 1tbsp peanut butter
  • 1tbsp Cocoa powder
  • 180g cake flour
  • 30g potato flour
  • 50g cornflour
  • 30g instant oat cereal mix
  • ¼tsp baking soda
  • 50g egg whites
  • 40g ground pistachios
  • 150g dark baking chocolate
  • 100g toasted ground pistachios
  • oval-shaped cookie cutter
Step 1: Prepare the dough
  1. Add butter and sugar into the Kenwood XL Sense stand mixer. Beat on medium-high speed until light and fluffy.
  2. Add coffee paste and peanut butter. Beat on medium-high speed till well mixed.
  3. Add in cocoa powder, cake flour, potato flour, cornflour, instant oat cereal mix and baking soda. Mix on low speed till the ingredients are well combined.
Step 2: Cut the dough and bake
  1. Preheat the oven to 150 degree Celsius.
  2. Lay a large piece of cling wrap on the work table. Place dough in the middle. Cover the dough with another layer of cling wrap and roll out the dough to a thickness of about ½ inch. Cut the shape using an oval-shaped cookie cutter.
  3. Arrange the cookie on the baking tray lined with parchment paper.
  4. Brush the top of the cookie with egg white, sprinkle ground pistachios on them.
  5. Bake for 25 – 30 mins. Remove from oven set aside to cool.
  6. Before baking the 2nd batch of cookie, cool the baking tray first before laying the cookie dough on it.
Step 3: Melt the chocolate
  1. Chop the dark chocolate bar into small pieces. Put the chocolate into a stainless-steel bowl and place it over a pot of simmering water. Stir gently until the chocolate melts. Remove the bowl of melted chocolate from the heat.
Step 4: Coat the cookies and ready to serve
  1. Dip the top of each baked cookie into the melted chocolate. Sprinkle toasted ground pistachios on the coated surface of each cookie.
  2. Set aside to cool and it is ready to be served. Store in airtight containers and there you have, a delicious treat on standby whenever you're craving for a treat.
