Saba Fish Breakfast Cups
Ayam Brand Saba Mayo
1/2 beaten egg +1 tbsp water
Step 1: Prepare the pastry
Preheat the oven to 180°C.
Lightly dust your workspace with some flour then lay the puff pastry out. Cut each piece into half then place one half on top of the other.
Use a cup or egg mould to cut out circles from the stacked halves.
Place the cut pastries on a baking tray lined with baking paper and brush the top with egg wash. Set them to bake for 20 mins at 180°C or until the pastry has risen and is golden brown.
Step 2: Prepare the filling
In a bowl, add the saba mayo, red onion, carrot, salt, pepper, and lemon juice. Mix well.
Step 3: Assemble the cups and bake
Using a knife, carefully cut a circle in the middle of the pastries and press it down until it is flat.
Add the saba filling into the holes of the pastries and garnish with some chopped coriander.
