Ingredients
- 1/2 duck chop into chunky pieces
- 500 g salted vegetable sliced into large pieces
- 2 tomatoes quartered
- 4 salted plums mashed slightly to release the juice
- 2 cloves garlic rinsed and mashed
- 1 L chicken stock
- 500 ml water
- 1 tbsp white pepper crushed
Instructions
Prepare the duck
- Rub salt on the duck and rinse it thoroughly
- In a pot, heat up water. When it starts to simmer, add in the duck meat to blanch it. #Tip: This will remove the scum on the duck and it will give you a clearer soup.
Boil the soup & serve hot
- Stove method: Add the blanched duck and all the ingredients into a pot. Cook over stove for 3 hours till the duck softens. Monitor the water level as it cooks, top up with more water when required.
- Pressure cooker method: Add the blanched duck and all the ingredients into the electric pressure cooker. Select the right setting and it will take about 1 hour to cook.
