Shrimp Paste Fried Rice
This is a traditional Thai recipe that truly sets itself apart from all the other variations of fried rice. At first glance, shrimp paste with rice might seem a little usual but with its rice nicely laced with a delectable shrimp paste - this dish is definitely packed with flavours to savour.

Ingredients
Shrimp Paste Fried Rice
  • 3cups white ricecooked (3杯白饭,煮熟)
  • 2tbsp shrimp paste(2汤匙虾酱)
  • 1tbsp garlic(1汤匙大蒜切碎)
  • 1tbsp cooking oil(1汤匙油)
Sweet Pork
  • 120g pork bellysliced into small pieces (120克三层肉,切成小块)
  • 50g palm sugar(50g椰糖)
  • 3tbsp soy sauce(3汤匙酱青)
  • 1tbsp cooking oil(1汤匙油)
Sides (配料)
  • 2 eggs(2鸡蛋)
  • 1 pork sausage(1香肠)
  • 2 salted eggs(2个鸭蛋,熟)
  • 100g long bean(100克长豆)
  • 1 cucumbercut into strips (1黄瓜)
  • 2 thai sour green mango(2泰国酸芒果)
  • 5 chilli padi(5小辣椒)
  • 3 shallots(3块葱头)
Instructions
Step 1: Prepare the sides and set aside (准备配料,并放在一边)
  1. Eggs: In a frying pan, heat oil and cook omelette. Once cooked, remove from pan. Cut into thin strips.  (鸡蛋:在煎锅热1茶匙油,倒入打散的蛋。一旦煎熟,从锅中取出。切成薄条。)
  2. Pork sausage: Cut into strips and stir-fry it in a pan.  (香肠:切成条状,倒入煎锅里翻炒。
  3. Salted eggs: Peel and cut into small cubes(咸蛋:剥皮,切成小立方块)
  4. Long bean: Cut into small pieces about 1cm (长豆:切成小块,约1厘米)
  5. Cucumber: Shred into strips (黄瓜:切成条)
  6. Thai sour green mango: Peeled and shred into strips (泰国绿芒果:剥皮并切成条)
  7. Chilli padi: Cut into small pieces (辣椒:切成小块)
  8. Shallots: Slice into thin pieces (葱头:切成薄片)
Step 2: Fry rice (炒饭)
  1. In a pan with heated oil, stir-fry garlic till the fragrance releases. Add in shrimp paste and rice. Mix evenly. Remove from heat and transfer into the serving plate. (在锅里热油,倒入大蒜,翻炒直至香味释放。加入虾酱和米饭。混合均匀。取出并摆放在盘里。)
Step 3: Cook the Sweet pork(炒甜猪肉)
  1. In a pan with heated oil, add in palm sugar and stir. Once is it all melted, add in pork, water and soy sauce. Stir-fry till the pork is cooked and sauce reduce, remove from heat and place it on the serving plate. (在锅里热油,加入椰糖,搅拌。一旦糖全部融化,加入猪肉,水和酱油。搅拌至猪肉煮熟,调味汁减少,取出,放在盘子里。
Step 4: Assemble and ready to serve! (摆盘,上菜咯!)
  1. On the serving place with rice and pork, lay the sides dishes and ready to serve! (将配菜摆放在盘里,即可享用!)
