Soak the snow fungus and mushroom in hot water for 15 mins.
Snow fungus: Using a pair of scissors, remove the stem of the snow fungus and cut into smaller pieces.
Mushroom: Use a scissor to remove the stem, cut it into strips.
Red dates: Use a scissor and slit the red dates into 4. #Tips: This will allow the flavours to be released while it cooked
Cook the soup
Boil 2L water on high temperature in a pot. Once it starts to boil, add in all the ingredients, except for the seasoning.
Once the water starts to boil, reduce the fire and let it simmer for 1.5 hr till the chicken is fully cooked through.
Monitor the water level as you cook. Add in more water to ensure that the ingredients are fully cooked through.
Season the soup and serve
Add in the seasoning and let the soup simmer for a while to ensure that seasoning is dissolved. Serve hot.
