Ingredients
Chicken and marinade
- 2 chicken legs chopped into bite-sized pieces
- 3 pcs dried chinese mushrooms soaked and cut into thick slices
- 4 pcs old ginger julienned
- 1/2 tsp pepper
- 1 tsp light soy sauce
- 1 tbsp chinese cooking wine aka hua diao jiu
- 2 tbsp sesame oil
- 1 tbsp corn starch
- 1 bottle black-boned chicken essence
Steaming ingredients
- 10 g wood ear fungus soaked
- 4 pcs red dates remove seeds and slice thickly
- 1 tbsp goji berries
Garnish
- 1 bottle black-boned chicken essence
- coriander leaves to garnish
Instructions
Marinate the chicken
- Mix the marinade ingredients and coat the chicken and mushrooms. Marinate for a few hours or overnight
Steam the chicken
- Place the wood ear fungus onto the dish and add the marinated chicken mixture over the fungus.
- Spread red dates and goji berries on the chicken.
- Steam for 25 minutes.
Garnish and serve
- Remove the dish from the steamer, and add in the black-boned chicken essence.
- Garnish with coriander and serve.
