Chicken and marinade
  • 2 chicken legschopped into bite-sized pieces
  • 3pcs dried chinese mushroomssoaked and cut into thick slices
  • 4pcs old gingerjulienned
  • 1/2tsp pepper
  • 1tsp light soy sauce
  • 1tbsp chinese cooking wineaka hua diao jiu
  • 2tbsp sesame oil
  • 1tbsp corn starch
  • 1bottle black-boned chicken essence
Steaming ingredients
  • 10g wood ear fungussoaked
  • 4pcs red datesremove seeds and slice thickly
  • 1tbsp goji berries
  • 1bottle black-boned chicken essence
  • coriander leavesto garnish
Marinate the chicken
  1. Mix the marinade ingredients and coat the chicken and mushrooms. Marinate for a few hours or overnight
Steam the chicken
  1. Place the wood ear fungus onto the dish and add the marinated chicken mixture over the fungus.
  2. Spread red dates and goji berries on the chicken.
  3. Steam for 25 minutes.
Garnish and serve
  1. Remove the dish from the steamer, and add in the black-boned chicken essence.
  2. Garnish with coriander and serve.
