Yuzu Lemon Flaxseed Cupcakes

Ingredients
Flour mixture
  • 180g self-raising floursifted
  • 1/4tsp salt
  • 6tbsp 100% Pure Golden Flaxseed Powder
Yuzu lemon batter
  • 200g butter
  • 80g castor sugar
  • 2tbsp lemon zest
  • 4 egg yolks
  • 120ml yuzu juice3 tbsp yuzu jam and 90ml water
  • 2tbsp lemon juice
Meringue
  • 4 egg white
  • 70g castor sugar
Yuzu frosting
  • 250g cream cheeseroom temperature
  • 80g unsalted butterroom temperature
  • 125g icing sugarsifted
  • 3tbsp yuzu jam
Instructions
Step 1: Prepare the flour mixture
  1. Add the flour, salt and flaxseed powder in a mixing bowl and mix well.
Step 2: Prepare the yuzu lemon batter
  1. Beat butter in a mixing bowl until soft and creamy.
  2. Add in sugar and zest and beat till light and fluffy.
  3. Gradually add in egg yolks and beat till well combined.
  4. Add in the flour mixture and juices into the batter in 3 batches and beat till well combined.
Step 3: Prepare the meringue and combine
  1. In a clean mixing bowl, whisk egg white till frothy.
  2. Gradually add in sugar and beat till stiff peak.
  3. Fold the meringue into the yuzu lemon batter in 3 batches using a spatula till well combined.
Step 4: Bake the cupcakes
  1. Line the cupcake tin with paper cupcake liners and fill each liner till 3/4 full. #Tip: Use an ice cream scoop to fill the cupcake liners.
  2. Bake in pre-heated oven at 180°C for 20-25 minutes or until a skewer comes out clean when inserted into the cupcake.
Step 5: Prepare the yuzu lemon cream cheese frosting
  1. Beat the cream cheese and butter until smooth.
  2. Add the icing sugar and beat until the sugar dissolves and the mixture is light and creamy.
  3. Add the yuzu jam and whisk until light.
  4. Fill the frosting into a piping bag and pipe the frosting on the cupcakes. #Tip: Put the piping bag over a tall cup to help hold it upright while filling the piping bag.
