
Innovative Makmur Peanut Cookies by Chef Zan!
Scrumptious cookies that melts in your mouth? Yes please!
Makmur Peanut Cookies (also known as, Kuih Makmur) is one of the old classics and an all-time favourite of many. Unlike the traditionally white in colour and round cookies, these Makmur Peanut Cookies are in green in colour and shaped like leaves! Doesn’t it look pretty and delicate?
This recipe is shared by Chef Zan, a pastry chef who runs her own baking academy at Zan's Treats. These cookies are her favourite, and definitely makes these to serve her guests during the Hari Raya Eid celebrations. With Chef Zan's recipe, mastering this recipe will be a piece of cake!
Here are the ingredients required: unsalted butter, ghee, egg, vanilla essence, green food colouring, plain flour, grounded peanuts, castor sugar, salt and icing sugar.
Firstly, prepare the peanut filling.

Combine ingredients for peanut filling.
Combine all the ingredients for the peanut filling in a mixing bowl. Mix evenly.
Secondly, prepare the cookie dough.

Whisk the mixture using Kenwood's stand mixer!
Using Kenwood’s stand mixer, beat butter and ghee at medium-high speed until light. Add in egg, vanilla essence and green food colouring. Mix well. Add in flour and salt. Mix until the dough becomes firm.
We used Kenwood's Chef XL Sense and for mixing the dough till it became firm. With the K-Beater, the dry ingredients are mixed together perfectly. This stand mixer is especially useful when you make huge batches of cookies for the Hari Raya special occasion.
Thirdly, wrap the cookie with peanut filling and send to bake.

Roll the dough into 10 grams each!
Preheat the oven to 150 degree Celsius. Roll the cookie dough into balls of 10 grams each.

Flatten the centre of the dough for the peanut fillings.
Flatten the dough and fill the center with the peanut fillings.
Here comes the design.

Use a pastry crimper to create the leaf design!
Seal the edges by pinching the dough together. To make the leaf design, use a pastry crimper. Start from the side and slowly work your way through to the other end. Repeat until all the dough are used up.

Arrange the cookies on a baking tray lined with baking paper.

Transfer cookies to the oven and bake for 25 minutes on the middle tray. Do keep a close look at the cookies and ensure not to over bake them as they turn brown easily.

Allow cookies to rest on a wire rack.
Remove the cookies from oven and allow them to cool on a wire rack. Dust cookies with some icing sugar, you’re not ready to serve this traditional classic Makmur Peanut cookies!

- 90 g unsalted butter
- 26 g ghee
- 1 egg
- 1 tsp vanilla essence
- 4 drops green colouring
- 200 g plain flour
- 120 g grounded peanuts
- 20 g castor sugar
- 1 pinch salt
- 30 g unsalted butter melted
- 300 g icing sugar
- Place all the ingredients for the peanut filling in a mixing bowl, mix evenly and set aside.
- In the Kenwood stand mixer, beat butter and ghee at medium-high speed until light.
- Add egg, vanilla essence and green colouring. Mix well.
- Add flour and salt. Mix until the dough becomes firm.
