Ingredients that you will need to marinate the chicken: chicken legs, Chinese mushrooms, light soy sauce, old ginger, pepper, Chinese cooking wine (hua diao jiu), sesame oil, corn starch, and Hockhua’s Black-boned Chicken Essence.
Ingredients needed for steaming: wood ear fungus, red dates, and goji berries
Garnish: Hockhua’s Black-boned Chicken Essence and coriander leaves
First to prepare the marinade, place all the chicken and marinade ingredients into a bowl and use your hands to mix and cover the chicken with the ingredients. Cover the bowl with cling wrap and set it in the fridge to marinate for at least two hours.
#Tip: for a quick, healthy dinner, marinate the chicken the night before so all you need to do is steam the chicken when you get home.
When you are ready to cook, place a dish into the steamer and place the wood ear fungus onto the dish.
Next, place the marinated chicken and mushrooms over the fungus.
Add the rest of the remaining marinade sauce as well as the red dates and goji berries. Cover with the lid and let the dish steam for 25 minutes.
Lastly, remove the dish from the steamer and enhance the flavour and nutritional value of the steamed chicken with a bottle of Hockhua’s Black-boned Chicken Essence and some coriander leaves.
And there you have a delicious and nutritious dish that is extremely easy and quick to make! The chicken is really tender and has a sweetness to its flavor from the red dates and goji berries. The wood ear fungus also absorbs the marinade seasoning and gives a refreshing bite in contrast to the tenderness of the chicken.
#Tip: Put some rice to cook while steaming the chicken so that it would finish cooking around the same time the chicken is done and your dinner is ready!
