Dish: Angel hair “Bak Chor Mee” With Hokkaido Scallop and Caramelized Baby Squid

Many years of working together have seen Chef Marvas Ng of Path and Chef Russell Misso of BRDL enjoy many late night meals with their favourite supper dish - Bak Chor Mee. Their seafood-laden take on a much-loved Singaporean classic means lovers of shellfish will rejoice at the addition of scallops and hawker-style baby squid, as these two livewire Chefs assemble a dish featuring their fondness for local cuisine and flavours.

Dish: Gula Melaka Glazed Smoked Salmon and Sambal Slaw, paired with Fat-Washed Martell Noblige Cocktail with Hojicha Caramel, Clarified Packham Pear, White Peach Vinegar
Chef: Chef Jayce Ho & Juan Yi Jun
Date: 8 September (Thursday), 7.00pm
Jayce Ho presents a pandan-and-maple smoked salmon dish, glazed with gula melaka, served with a side of sambal-flavoured slaw. She is joined by Juan Yi Jun, who puts together a cocktail featuring fat-washed Martell Noblige, Hojicha Caramel and flavours of fresh peach and pear. Jayce runs popular artisanal meat smoking outfit SGBrisketKitchen, whilsts Yi Jun helms highly-regarded bar No Sleep Club, 15th on this year's Asia's 50 Best Bars List.

Dish: Burnt Coconut Min Chang Kueh/Soerabi with R4D faux gras, Reblochon and Tropical Fruits
Chef: Chef Will Goldfarb (Bali) & Chef Geneieve Lee
Date: 10 September (Saturday), 4.00pm
Chef Genevieve Lee and Chef Will Goldfarb collaborate for an innovative take on a sweet Southeast Asian pancake dish known as min chang kueh in Singapore, or soerabi in Indonesia. This treat blends traditional flavours, unusual ingredient pairings and detailed techniques for a delicious outcome! Chef Genevieve is a Masterchef Singapore finalist and owns artisanal bakery Sourbombe, and Chef Will Goldfarb runs legendary dessert institution Room 4 Dessert in Ubud, Bali.

Pastry Chefs Maira Yeo and Justin Lee collaborate on a delicious sweet treat full of familiar, tropical ingredients. A toasty tart shell made with konggaru (soybean) cradles a heart of spiced pineapple, before being crowned with a luxurious coconut chantilly layer. Chef Maira of 2-starred Cloudstreet was recently minted Asia's Best Pastry Chef.

Chef Muhammad Imran presents a masterclass with handmade traditional Italian pasta - artisanal culurgiones stuffed with a local "bergedil" filling and two savoury, seafood based condiments with a spicy kick. Showcasing his meticulously handcrafted signature pastas, Chef Muhammad Imran heads A Mano Sg and conducts regular masterclasses and dining collaborations demonstrating the art of fine pasta making.

Dish: Masala Chai Pot de Crème
Chef: Chef Muhammad Kamal
Chef Muhammad Kamal demonstrates his dessert spin on his favourite classic Indian-Muslim drink. He weaves the essence of traditional masala chai into a richly aromatic custard dessert, showcasing the refreshing bounty of spices first introduced to Singapore by immigrants in our rich trade history. Chef Muhammad Kamal is the Emeritus President of the Singapore Halal Culinary Federation and serves as an exco-member of the World Platform of Islamic Countries Culinary Societies (WICS).

Chef: Chef Damian D’Silva
Chef Damian of Rempapa gives us a masterclass on heritage flavours, crafting a Peranakan Fish Cake and inducting viewers into the world of traditional dishes with elements of various ethnicities. Widely recognised as the 'grandfather of heritage cuisine' in Singapore, Chef Damian's command of Peranakan, Chinese, Malay, Indian and Eurasian foods allows him to share glorious recipes from our rich culinary heritage, for flavours and food stories that resonate with today's diner.

Chef Daniel Sia of The Coconut Club puts together a deliciously tender and savoury Prawn Otak from scratch. With 30 years of experience spanning classical French stints in Michelin-starred restaurants and group work as culinary director of the Lo & Behold Group, he now runs The Coconut Club as Managing Partner. He wields the traditional with modern techniques, spreading the good news on Singapore's tasty history with coveted heritage recipes.
