Here are the ingredients that you will need: BRAND’S® Essence of Chicken, chicken stock, water, egg, mee sua, xiao bai cai, fried onion, boneless chicken thigh meat, light soya sauce, Chinese cooking wine, sesame oil, white pepper, salt, and corn flour.
Let’s start preparing our breakfast!
Step 1- Marinate the chicken & hard boil an egg
In a clean bowl, add the chicken and all of the seasoning. Mix well and leave it to marinate for at least 30 minutes.
Tip- To save time in the mornings, you can marinate the chicken the night before and leave it in the fridge. That will allow the chicken to absorb more flavour and you can catch a few more minutes of beauty sleep!
While the chicken is marinating, fill a saucepan with water and bring it to a boil. Add in an egg and let it boil for 8 minutes.
Once cooked, put the egg in a bowl of lukewarm water to cool off. Deshell it and set aside.
Step 2- Cook the mee sua
In a saucepan, add the chicken stock and water and let it boil before lowering the heat to bring the soup to a simmer.
Add in the mee sua and cook it for a quick 30 seconds. Remove the noodles and place them in a serving bowl.
Tip- do not over cook the mee sua as they can turn soggy very quickly.
Now, add in the chicken slices and vegetables to the soup and turn up the heat. Once the soup starts to boil and your chicken and vegetables are cooked through, turn off the heat.
Pour in a bottle of BRAND’S® Essence of Chicken and give the soup a good stir.
Tip- it is important that the soup does not come to a hard rolling boil here as high heat will destroy the nutrients of the Essence of Chicken. If your soup has boiled, allow it to cool down slightly before adding in the Essence of chicken.

Step 3- Assemble and serve

- 1 bottle Brand's® Essence of Chicken
- 200 ml chicken stock
- 100 ml water
- 1 egg
- 1 bunch mee sua
- 1 stalk xiao bai chye
- 1 tsp fried onion as desired
- 100 g boneless chicken thigh meat cut into short strips
- 1/2 tsp light soya sauce
- 1/2 tsp sesame oil
- 1 dash white pepper
- 1/4 tsp salt
- 1/4 tsp corn flour
- Mix chicken thigh with all the seasoning. Give it a good mix and marinate for at least 30 mins.
- In a saucepan with boiling water, boil the egg for 8 mins. Once it is cooked, transfer to a bowl of room temperature water. Deshell and set aside.
- In a saucepan, boil the chicken stock and water. Reduce heat to simmer.
- Add in mee sua. Cook for 30 sec or desired doneness and transfer into a serving bowl.
- Add in chicken slices and green vegetables. Once the soup starts to boil, off the heat and pour in a bottle of BRAND’S® Essence of Chicken.
- Place the vegetable and chicken meat on the mee sua.
- Pour the soup over.
- Place the hard boil egg and garnish with fried shallot.
