Ingredients
For 9 Koi fishes
- 5 g konnyaku jelly powder
- 500 ml water
- 200 ml coconut cream
- 90 g sugar
- Food coloring: black, orange, yellow
For Pond:
- 5 g konnyaku jelly powder
- 700 ml water
- 100 g sugar
- Food colouring: turquoise
Garnish
- 2 gold leaves optional
Instructions
Step 1: Make the Koi fishess
- In a saucepan, mix sugar, jelly powder and water. Give it a good mix until the sugar and jelly powder has dissolved. Pour in coconut cream and mix.
- Boil on high heat and stir till the ingredients have fully dissolved.
- On the side, prepare an induction steamboat pot with 3 empty bowls, a cup half filled with water (for cleaning the syringe) and some water in the pot. Heat up the water to a gentle boil.
- Pour 10ml of the coconut mixture into each of the 3 empty bowls. Keep the rest of the coconut cream heated at the stove on low heat to keep it in liquid state.
- Use a disposable chopstick and mix in the gel colouring [black, yellow and orange] into the 3 bowls respectively.
- Follow the video steps to make the koi fish using the syringe.
- Each layer will take about 5 mins to set.
Step 2: Make the pond & assemble the Koi fishes
- In a saucepan, mix sugar, jelly powder, water and turquoise food colouring. Mix well.
- Boil on high heat and stir till the ingredients have melted. Skim off any foam that forms on top of the mixture.
- Pour 2/3 of the mixture over a sieve onto a 12 inch white round plate. Let it set. Leave the remaining mixture in the pot, heat it over low heat.
- Unmold the fishes on the surface of the pond and pour the remaining jelly on the pond and let it set.
- Place some gold leaf on it and ready to serve!
